RAGI DUDDALI / FINGER MILLET PUDDING !!!!!!


I adapted this recipe from NIYA'S WORLD. Ragi ( in Kannada)/ finger millet is very good for health. It cools your body. We call it nanchano in Konkani. Its a very delicious Konkani cuisine.  

INGREDIENTS:-

Tip:- please use the same measuring cup to measure ragi, milk and jaggery.

ragi flour/finger millet - 1 cup
milk - 1 1/2 cups
jaggery - 1 cup (melted and sieved)
cardamom pow - 2 pinches
ghee - 2 tsp

METHOD:-

1. Heat a non-stick pan. Add ragi flour+milk+jaggery.
2. Cook on a low heat for 15 mins. Stir occasionally.
3. Cook till the mixture leaves from the sides of the pan and thickens/dark brown colour.
4. Sprinkle cardamom pow and mix well.
5.Grease a thali with 1 tsp ghee.
6. Spread ragi duddali mixture evenly.
7. Sprinkle remaining 1 tsp ghee on top and gently smear ghee evenly with a spatula.
8. Cut ragi duddali to desire shape and size only after it fully cools to normal temperature.
