STUFFED CABBAGE PARATAS !!!!!!


My today's recipe is from NDTV FOOD. Stuffed cabbage paratas are easy to make, yummy but eat it hot. Another recipe for kids lunch box. You can have it with chutnies, raitas and north indian gravies but we had it plain.  Tasted great !

Ingredients


  • For the dough:

    1 cup atta/ wheat flour

    1 tsp oil

    Water

    Salt, to taste


    For the stuffing:

    1 cup cabbage, chopped

    1/2 cup onion, finely chopped

    2 small boiled potatoes, mashed

    2 Tbsp coriander leaves, chopped

    1/2 tsp ajwain

    1/2 tsp garam masala powder

    1/2 tsp red chilli powder

    Salt, to taste

    1/2 tsp zeera

    1/2 tsp heeng (Asafoetida)

    2 Tbsp oiL

Method

To make the dough:

Mix flour, salt, oil (if needed), ajwain and water to make a soft pliable dough (not sticky). Let it set as you prepare the stuffing.


For the stuffing:


Heat 2 tbsp oil in a pan and add zeera, hing. Now add chopped cabbage, onion, mashed potatoes and mix well.

Add salt as needed, coriander leaves and other spices.

Do not cover the pan and cook till the water evaporates.

Remove the stuffing from the pan and set aside to cool.


Making paranthas:

Now divide the prepared dough into small equal size balls.

Take one portion/ball and roll with a rolling-pin. Make a small roti and place a 1 Tbsp of prepared stuffing on the center.

Cover from all the side, dust some flour and roll again to make a proper parantha.

Make sure the stuffing should not come out, for that seal the sides with some water on the edges so the stuffing does not come out.

Heat a tawa and drizzle few drops of oil.

Place the stuffed parantha gently on the tawa and roast it from both sides by greasing it with oil or ghee.

Serve hot with curd and pickle of your choice.

ALOO PARATA !!!!




I adapted this recipe from TARLA DALAL...ALOO PARATA is a famous Punjabi dish and it goes well with curds, dal fry, dal palak (click here for dal palak recipe) etc.

INGREDIENTS:-

FOR THE DOUGH:-

whole wheat flour - 2 and 1/4 cups
salt - 1/2 tsp
ghee - 2 tbl sp

FOR THE STUFFING:-

potatoes , boiled - 4
onion, chopped - 1
coriander leaves, chopped - 1 tbl sp
green chillies, chopped - 4
dried mango pow(amchur pow) - 2 tsp
chilly pow - 1/2 tsp
cumin seeds(jeera) - 1 tsp
salt to taste
ghee - 1 tsp

OTHER INGREDIENTS:-

ghee - 1 tbl sp for cooking

METHOD:-

For the dough:-

1. Sieve the flours with the salt.
2. Add ghee and mix well. Add enough water and make a semi soft dough and keep aside

For the stuffing:-

1. Mash the potatoes coarsely or cut into very small pieces. Keep aside.
2. Heat the ghee in a vessel, add cumin seeds and onion and fry for atleast 3 mins.
3. Add the green chillies and fry again for 1 min.
4. Add the potatoes+salt+coriander+chilly pow+amchur pow. Mix well and cook for 1 min.
5. Cook the mixture and keep aside.

How to proceed:-

1. Knead the dough and divide into 10 portions.
2. Roll out one portion of the dough into a circle of 125 mm. (5") diameter.
3. Place one portion of the prepared filling in the centre of the dough circle.
4. Bring together all the sides in the centre and seal tightly.
5. Roll out again into a circle of 125 mm (5") diameter with the help of a lil flour.
6. Cook the parata on a tawa (griddle), using a lil ghee until both sides are golden brown
7. Repeat with the remaining dough and filling to make more paratas.
8. Serve hot.

PANEER PARANTA !!!!!!!!!



I adapted this reciepe from the blog "Indian food forever".

INGREDIENTS:-

100 gms Grated Paneer
1 finely chopped Onion
Coriander leaves finely chopped
Small piece of Ginger (grated)
1 or 2 finely chopped green Chilies
Salt, Red Chili powder and Garam masala as per taste
1/2 tsp Ajwain (optional)
Butter / Oil for frying






METHOD:-


1.Make dough out of whole wheat flour, as you would do for any parata/roti.
2.In a bowl mix all the stuffing ingredients.
3.Make two medium size chapati, add the filling to the one chapati and cover it with the second one. Now roll it slightly.








4.Cook on a pre-heated Tawa.
5.Turn it and pour half tablespoon oil or butter.

6.Spread it on the paratha and shallow fry over low heat. Turn it and again pour oil or butter on the other side.
7.Cook on a low heat till golden brown.

8.Serve paneer paratha hot with curd and your favourite chutney or with pickle.





and here's a tip:-

Do not add salt to the filling before, as it will leave water. Add salt only at the time of preparation.

CHEESE PARATA !!!!!!!





INGREDIENTS:-

2 cup whole wheat flour 
Water + lil oil + salt for kneading a dough
1 cup cheese, shredded( i used mozzarella)
1 tsp black pepper powder ( i added 1/2 tsp red chilly pow+ 1/2 tsp pepper pow)
Salt to taste
Chopped green coriander
3-4 tblsp oil( i used ghee)

METHOD:-

1.First knead a simple soft dough by adding water+lil oil_salt  to the flour.
2.Now make small equal balls of the dough
3.Roll each ball into a small round.
4.Mix the grated cheese+ salt+ pepper+coriander together and stuff a spoonful in the rounds.
5.Seal all the sides together and make small patties
6.Now roll these back again into sizable rounds keeping in mind that the cheese does not break the pastry and come out.
7.Heat the tawa and put one rolled round on it and make paratas.
8. Serve hot.
