HORSEGRAM DOSA !!!!!


HORSE GRAM DOSA is a healthy breakfast . This is nothing but our KULTHA RAMDAN recipe only the difference is no need to fermant batter over night & in kultha ramdan, we grind rice coarsely . Here, we grind everything together smoothly. I got this recipe from my gorgeous friend LAXMI SHENOY who is an alrounder. A must try one.


                                                                   (dosa batter)

INGREDIENTS:-

horsegram - 1 cup
urad dal - 1 cup
dosa rice - 2 cup
salt to taste
ghee - as required



METHOD:-

1. Soak horse gram, urad dal & rice together minimum for 3 hours.
2. Wash & grind them smoothly by adding enough water.
3. Take the batter in a bowl. Add salt & mix well.
4. Heat non stick dosa tawa, spread a laddle full of batter , drizzle ghee/oil on it & close the lid.
5. After a while turn it over , when done remove from fire.
6. Serve it hot with chutney/sambar/ any gravy/bhaaji/pickle.

NOTE:- If you are not using batter immediately, then keep it in fridge. Don't fermant it.

NEER DOSA WITHOUT COCONUT !!!!!!


This awsome recipe i got from my friend LAXMI SHENOY who is an ace cook. She has many interesting & easy recipes. Yet to try her other recipes like undi, buns etc. First i took my step back to try this recipe as recipe says no coconut. I felt neer dosa will become harder. But to my surprise it turned out even more soft. Ingredients are only white rice & salt. Sounds interesting na ? 

INGREDIENTS:-

white rice - 1 cup
salt - to taste (1 tsp, not heaped)
oil - as needed



METHOD:-

1. Soak the Dosa rice in water for 3 hours.
2. Drain and wash it.
3. Add water and salt and grind to make a very fine batter.
4. Add more water make a thin batter of pouring consistency.(batter should be watery)
5. Heat a non-stick tawa, grease with a little ghee or oil, & pour a laddleful of batter from a little height so that you get plenty of holes. Do not try to spread the batter with a spoon. Instead turn the non stick tawa using handle to spread d batter. Pour little more batter if required.

6. Cook the dosa on one side only and fold it twice.
7. Serve hot with your choice of side dish.

PANPOLO / NEER DOSA !!!!!!!


I adopted this recipe from SEEMA'S DINE DEVINE. Panpolo/Neer dosa is a South Indian delicacy. We eat panpolo with godda ravo, garlic chutney, potato song, cabbage buththi, paneer ghee roast, chicken curry etc. My personal favourite is panpolo & paneer ghee roast.


INGREDIENTS:-

Dosa rice - 2 cups
Grated coconut - 1/2 cup
salt - 1 tsp


METHOD:-

1. Soak the Dosa rice in water for at least 2 hours.
2. Drain and wash it.
3. Add water and grated coconut and grind to make a very fine batter.
4. Add salt and more water if necessary to make a thin batter of pouring consistency.
5. Heat a non-stick tawa, grease with a little ghee or oil, & pour a laddleful of batter from a little height so that you get plenty of holes. Do not try to spread the batter with a spoon.
6. Cook the dosa on one side only and fold it twice.

7. Serve hot with your choice of side dish.








(Tried green neer dosa today...just added palak leaves & green chilly while grinding ...tasted yummmm 👌👌 no need of chutney/sides )

COOKED RICE DOSA !!!!!!!!


This is my MILs recipe. A healthy way to finish left over cooked rice.

INGREDIENTS:-

white rice/dosa rice - 2 cups
cooked rice - 1 cup
poha - 1/2 cup
methi seeds - 1 tsp
cooking soda - 1/2 tsp
salt to taste

METHOD:-

1. Wash & soak dosa rice+methi seeds in enough water for 4-5 hours.
2. Wash & soak poha in enough water separately.
3. Grind  dosa rice+methi seeds+poha+cooked rice to a smooth paste in a mixer.
4. Add salt to taste & mix well. (add enough water to make dosa batter).
5. Let it ferment for 8-10 hours.
6. Next day add cooking soda to the dosa batter & mix well.
7. Make dosas ( don't flip it over. Cook only one side).
8. Serve it with coconut chutney or any chutney of your choice.

INSTANT ONION RAVA DOSA !!!!!!



I adopted this recipe from VEG RECIPES OF INDIA. Yummy , quick  & easy to preapare  dosa. A must try recipe.

Ingredients
main ingredients:
  • ½ cup unroasted rava/sooji/semolina)
  • ½ cup rice flour
  • 2 tbsp all purpose flour/maida or whole wheat flour/atta
  • 1 green chili/hari mirch, finely chopped
  • 1 medium onion/pyaaz, finely chopped - about ½ cup of finely chopped onion
  • 5 to 6 curry leaves/kadi patta, chopped
  • ½ inch ginger/adrak, finely chopped (optional)
  • water or buttermilk as required - i added 2 and ¼ cups water *check notes on how to make the buttermilk
  • 9 to 10 black peppercorns - crushed
  • 1 tbsp chopped coriander leaves (optional)
  • salt as required
for tempering
  • 1 tsp oil
  • ½ tsp mustard seeds
  • 1 tsp cumin seeds
  • oil or ghee as required for roasting the dosa
Instructions
  1. take the rava, rice flour, all purpose flour, green chilies, ginger, onion, coriander leaves, crushed black pepper in a mixing bowl.

  1. heat 1 tsp oil in a small frying pan. crackle the mustard seeds first. the mustard seeds should pop before you add the cumin seeds. then add the cumin and curry leaves. saute for a few seconds till the cumin browns.
  2. add this tempering mixture along with the oil to the other ingredients in the bowl. add salt.


  1. pour water or buttermilk and make a thin batter without any lumps. the batter should not be thick or of medium consistency. if the batter becomes too thin, then add some rice flour to slightly thicken it. keep aside for 15 to 20 minutes.

  1. heat the tava or non-stick pan. smear a bit oil with a slice of onion or a small piece of fabric or paper napkin.
  2. with a ladle pour the dosa batter from the edges towards the center.
  3. sprinkle ¼ or ½ or 1 tsp of oil from the top.
  4. let the base becomes golden and crisp. flip and cook the other side. when both the sides are cooked, remove the dosa from the pan. prepare all the dosas this way.
  5. serve the onion rava dosa hot with coconut chutney or vegetable sambar. onion rava dosa has to be served immediately.
Notes
*to make the buttermilk - dissolve 3 to 4 tbsp of yogurt in 2 cups of water. whip the buttermilk very well before you add it to the other ingredients.

INSTANT POTATO - ONION DOSA !!!!!!


I adopted this recipe the blog COOKIE AND BOOKIE. A yummy dosa , no fermantation is required. Here i added onions too & it tasted potato onion bhaaji to me :D 

INGREDIENTS:-

  • 2 Boiled Potatoes - big size
  • 1 Cup Of rice flour
  • Salt To Taste
  • 1/2 Cup Curd
  • 2 Chilies
  • 1 Bunch Coriander Leaves

METHOD ::-

1. Mash the boiled potatoes with your fingers or use mixer.
2.Take a vessel. Pour water (1 and 1/2 cup to 2 cups) in the rice flour and stir well. Make sure that rice flour is mixed thoroughly.
3. MIx curds, chillies, coriander leaves, mashed potatoes, chopped onions, salt in the wet rice flour. This will make dosa dough.
4. Prepare dosas using this dough.
5. Cook on both the sides.

TOMATO OMLETTE !!!!!!


INGREDIENTS:-

1 cup All purpose flour(maida)
3/4 cup finely chopped tomato,
1/2 cup finely chopped onion,
2 finely chopped green chilies,
3-4 strands chopped coriander leaves,
1/4 tspTurmeric Powder
1/4 tsp mustard seeds

1/24tsp cumin seeds
2 curry strands
Salt (to taste),
Oil (for cooking).


METHOD:-

1  Combine  flour, tomato, onion, turmeric powder, coriander leaves salt, and water and make a mediumthick batter.
2.  Give tadka of mustard seeds+cumin seeds+curry strands to it & mix well. 3.  Heat a tava and smear some oil on it.
4.  Spread the batter.
5. Pour a tbsp of oil, when it is cooked and then flip it over.
6. Cook the other side until done.

WATERMELON RIND DOSA !!!!!!!!


Best out of waste...yes...my today's recipe is best out of waste. Now onwards after eating the red part of watermelon, don't throw the white part. Remove the skin & chop it & use it in making yummy & healthy dosas. For kids or those who loves sweet dosas, you can add jaggery to he batter &  make sweet dosas & serve it with butter. They are even more tasty & kids will love that version for sure.

Ingredients:

2 cup Dosa Rice
A half piece of rind from a medium sized watermelon 
2 tsp methi seeds
1 Cup Poha
Salt to taste
Oil for greasing the pan
                              
                  
METHOD:-

1. Soak the rice with methi seeds for around 4 hours.
2. Peel the skin from the watermelon to get only the white rind part. Chop it into medium size pieces.
3. Add it into the blender along with rice and methi seeds and blend it into a coarse paste. Add little water if necessary.
4. Wash poha well and add it to the coarse paste above blend it into a smooth paste. The Batter should be slightly on the thicker side.
5. Pour into a wide container with enough height for the batter to ferment. Add salt & mix well.
6. Keep the batter closed  in a warm place for 8 hours or overnight.
7. Heat a pan and add few drops of oil..Reduce the flame to medium and pour the batter in the centre of the pan. Spread it a little ( don't make dosa thin, it should be thick).
8. Cover it with a lid & cook till top part is cooked.
9. Remove from fire & serve it along with chutney/sambar/pickle.

SPECIAL BUTTER MASALA DOSA !!!!!!!!!!!!


I adapted this recipe from KUDPI RAJ'S GARAM TAWA. A must try one.

INGREDIENTS:-

A) Dosa Ingredients:-
1. Raw Rice - 4 cups
2. Urad Dal - 1 1/2 cup
3. Channa Dal - 1/4 cup
4. Toor Dal - 1/4 cup
5. Frenugreek Seeds(Methi) - 2 tsp.
6. Phova(Beaten Rice) - 1 fistful
7. Sugar - 2 tsp
8. Salt - To taste
Method:
1. Soak ingredients 1 to 5 for at least 4 hrs.
2. Wash phova and grind along with soaked ingredients to a thick dosa batter, slightly thinner than Idli batter.
3. Allow to ferment at room temperature(30 Degree C) for 8-12 hrs.

4. Add sugar and salt to taste. Mix well and allow to stand for 15 mins.



B) Potato Bhaji Ingredients:
1. Potatoes - 250 Gms, boiled, peeled and smashed(Not mashed)
2. Onions - 250 Gms thinly sliced
3. Green Chillies - 2-4(Check whether too hot!) sliced
4. Mustard Seeds - 1 tsp
5. Urad Dal - 1 Tsp
6. Curry Leaves - 1 sprig
7. Turmeric powder - 1/2 tsp
8. Refined Vegetable oil - 2 tsp
9. Salt - To taste
Method:
1. Heat oil in a thick deep frying pan. Prepare seasoning with mustard seeds, urad dal, curry leaves and sliced green chillies. Add Turmeric powder and fry.

2. Add onion slices and fry till transparent. Add salt to taste and potato smash. Mix well and allow to settle for at least 15 mins off heat.


C) Red Chutney Ingredients:
1. Long red chillies - 10
2. Tamarind - cherry size ball
3. Roasted Channa Dal(Huri Kaadle/Putaani)  - A Fistful
4. Onion - 1 medium chopped
5. Garlic - 4 flakes
6. Salt - To taste
7. Refined oil - QS
Method:
1. Roast dry long chillies on a hot tawa/griddle with little oil.
2. Grind the chillies along with other ingredients(Except oil) to a smooth thick paste using little water.


MASALA DOSA INGREDIENTS:-

1. dosa batter
2. potato bhaji
3. red chutney
4. fresh unsalted butter
5. refined vegetable oil (i used coconut oil)


METHOD:-

1. Heat a nonstick thick flat bottomed tawa/griddle on medium flame.
2. Sprinkle little water to check the heat.
3. Pour dosa batter using a round cup like laddle & spread the dosa batter thin & evenly.
4.Allow the dosa to turn dry on top & reddish at bottom.
5.Smear the dosa with 1tsp or more or red chutney, 1tblsp or more poato bhaji & a knob of butter.

6. When the dosa is dry & crisp, fold it into half moon or tubular roll & serve with coconut chutney & sambar (optional).
