INSTANT UTTAPAM !!!!


I adapted this recipe from LOVE4COOKING. Easy & quick to make recipe. Taste is too good or i can say above my expectation & everyone liked it a lot.

INGREDIENTS:-

curds - 1 cup
semolina/sooji rava - 1 & 1/2 cup
rice flour - 1/2 cup
carrot, grated - 1/2
capsicum, chopped - 1/2
onion, chopped - 1
coriander leaves, chopped - 1/4 cup (optional) ( i didn't use)
salt to taste
baking soda or ENO fruit salt - a pinch ( i used ENO)
oil - as required


METHOD:-

1. Take a cup of yogurt or curd as we call it , Add water & churn it a little to make buttermilk.
2. To this add semolina or Rava or Suji as it is commonly called in India & rice flour & mix well.
3. Let this mixture stand for sometime for about 30-45mins


4. Add finely chopped onion+finely chopped capsicum+grated carrot+finely chopped coriander leaves+salt to taste. & mix it well.
5. Add a pinch of baking soda or eno fruit salt to this mixture.
6. Heat a griddle till nice and hot...
7. Pour 2 spoons of batter and move it to make a nice and thick round dosa



8. Turn when cooked and let it cook on the other side.


OR

Skip the step 4. Mix all chopped veggies & keep it aside. Pour 2 spoons of plain batter & make thick round dosa & Sprinkle a spoon of the finely chopped vegetable mixture on it. Turn when cooked & let it cook on vegetable mixture side. ( i found the 1st one is easier than 2nd one. Btw, i tried both the ways)
9. When both sides properly cooked take it out from tawa. Serve hot with coconut chutney. 


I tried to make THIRANGA special uttapam on Independance Day too by following 2nd step. 



And here is the result :D
