VEG. PULAO !!!!

I adapted this recipe from my neighbour aunt who is an expert in making this pulao. And i tried my level best to match her. This is hubby's fav pulao.

INGREDIENTS:-

Long grain rice(basmathi) - 1 cup
onions, chopped length wise - 2
chopped veggies (i used carrot, beans, frozen green peas) - 3/4 cup
salt to taste
coriander leaves for garnishing (optional)
ghee - 2 tsp
boiling water - 2 1/2 cups

GRIND TOGETHER:-

ginger piece - 1/2 inch
black pepper - 2
cloves - 2
cardamom - 2
cinnamon - 1/2 inch
jeera(cumin seeds) - 1/4 tsp
coriander seeds - 1/2 tsp
green chilly - 1
coriander leaves - 1 bunch
garlic flakes - 7-8
onion - 1/2 

METHOD:-

1.Grind all the ingredients mentioned under "GRIND TOGETHER" to a smooth paste.
2. In a cooker, fry lengthwise chopped onions till they are transparent in colour.
3. Then add ground masala and fry till the raw smell disappears.
4. Now add washed rice+chopped veggies and fry for a while.
5. Now add boiling water (2 1/2 cups) + salt to it and mix well. 
6. On the top of it put 2 tsp ghee(do not mix)  and close the lid and take 1 whistle. Then simmer it for 5 mins and switch off the stove.
7. After sometime, open the lid and mix well the pulao and garnish with coriander leaves.
8. Serve hot with cool cool raita.
