CRUNCHY STUFFED CAPSICUM !!!!!


Hi frenzz, do you want to finish left over cooked rice ?????don't know what to do with it ??? or you fed up with the same techniques like making dosas, lemon rice, kesari baath etc. Here is a yummy way to finish your left over rice. I am damn sure your kids gonna love this dish. Actually i had 1 cup of cooked rice in my fridge & this time i wanted to finish it in a new way. So, googled for it. inspired by so many blogs finally i found my own recipe to finish it & that is CRUNCHY STUFFED CAPSICUM/CRUNCHY STUFFED BELL PEPPERS.

INGREDIENTS:-

capsicum / bell peppers - 2. any colour
cooked rice - 1 cup
button mushrooms - 6-7
onion - 1 medium
tomato - 1 medium
pepper powder - 1/2 tsp
read chilly powder - 1/2 tsp
salt to taste
coriander leaves chopped  - 2 tbsp
dried mint leaves (kasoori methi) - 1/2 tsp

METHOD:-

1.  Wash & cut bell peppers into halves (as shown in the picture) & deseed it .


2. In a kadai, heat oil & add finely chopped onion + finely chopped mushrooms to it & fry it till light brown.
3. Now add tomatoes+pepper powder+red chilly pow+salt+coriander leaves+dried mint & fry till tomatoes are mushy.
4. Now add cooked rice + little water & mix well.
5. Now your filling is ready.


6. Now apply ghee/butter to the bell peppers from inside & outside. & scoop the mixture into the bell peppers.


7.  Now microwave it for 12 minutes.
8. Your crunchy stuffed capsicums are ready to serve.
