TRICOLOURED CAPSICUM RICE !!!!


I adapted this recipe from SULEKHA FOOD.COM. I made slight changes in recipe. I skipped jeera & ginger. & i used ordinary onion instead of shallots. Recipe is too good & a must try dish for capsicum lovers. 

INGREDIENTS:-


  • Red capsicum-1/2 no
  • Yellow capsicum-1/2 no
  • Green capsicum-1/2 no
  • Bengal gram dal-10 g
  • Split urad dal-10 g
  • Mustard seeds-5 g
  • Cashew nuts-10 g
  • Green chillies-4-5 nos
  • Ginger-1 no
  • Sliced sambar onions-20 gms ( i used 1 medium ordinary onion here)
  • Hing powder-5 g
  • Basmati rice-100 g
  • Coconut oil-20 ml ( i used half ghee + halt coconut oil)
  • Freshly chopped coriander-For garnish


METHOD:-

  • Finely chop all 3 colour capsicum, Green chilies, onion & coriander leaves.


  • Boil basmati rice+ little salt and keep it aside.


  • Heat coconut oil in a kadai.
  • Add Bengal gram and let it become golden brown.
  • Put split urad dal, mustard, cashew nuts, chopped green chilies, sliced onion, finely chopped capsicum, hing powder and salt.


  • Add the rice and mix it.



Your capsicum rice is ready to serve.







I served capsicum rice with KAJU DINGRI MASALA
