I adapted this recipe from SULEKHA FOOD.COM. I made slight changes in recipe. I skipped jeera & ginger. & i used ordinary onion instead of shallots. Recipe is too good & a must try dish for capsicum lovers.
INGREDIENTS:-
- Red capsicum-1/2 no
- Yellow capsicum-1/2 no
- Green capsicum-1/2 no
- Bengal gram dal-10 g
- Split urad dal-10 g
- Mustard seeds-5 g
- Cashew nuts-10 g
- Green chillies-4-5 nos
- Ginger-1 no
- Sliced sambar onions-20 gms ( i used 1 medium ordinary onion here)
- Hing powder-5 g
- Basmati rice-100 g
- Coconut oil-20 ml ( i used half ghee + halt coconut oil)
- Freshly chopped coriander-For garnish
METHOD:-
- Finely chop all 3 colour capsicum, Green chilies, onion & coriander leaves.
- Boil basmati rice+ little salt and keep it aside.
- Heat coconut oil in a kadai.
- Add Bengal gram and let it become golden brown.
- Put split urad dal, mustard, cashew nuts, chopped green chilies, sliced onion, finely chopped capsicum, hing powder and salt.
- Add the rice and mix it.
Your capsicum rice is ready to serve.
I served capsicum rice with KAJU DINGRI MASALA
