KAJU DINGRI MASALA !!!!!!


I adapted this recipe from ALLRECIPES.CO.IN.  I omitted mutter here & used only kaju & mushroom in this gravy. & i made this in gravy form & served this as side dish  with CAPSICUM RICE.  Here dingri means mushroom. 

INGREDIENTS:-

onions - 3 big
ginger - 1/2 inch
garlic flakes - 8-9
curds - 1 cup
salt to taste
oil
mushrooms - 400 gms
cashews - 2 tsp( for grinding) + 1/2 fistful + few for garnishing
coriander leaves - 1 tbsp + 2 tbsp



METHOD:-

1. Grind together onions+ginger+garlic+1 tsp cashew nuts+1 tbsp coriander leaves together to a fine paste adding little water.
2. In a non stick pan heat oil & fry ground masala till oil comes out & you get am aroma.
3. Add mushrooms ( cut into half) + little water & cook till mushrooms properly cooked.
4. Grind 2 tbsp coriander + curds together & add it to the mixture.
5. Fry remaining cashew nuts in little ghee till light brown.
6. Add half fistful fried cashew nuts into the gravy +salt & bring it to boil.
7. Check for the consistency of gravy. Add little water if necessary.
8. Garnish with fried cashew nuts & chopped coriander leaves.
9. Serve hot with rotis/rice dishes.







I served it as a side dish with CAPSICUM RICE.
