I adapted this recipe from the blog NIYA'S WORLD. This is a spicy egg curry goes well with boiled rice(paeg)/chapathis.
INGREDIENTS:-
eggs - 3 boiled
Kundapur masala powder - 4 tsp
onions, finely sliced - 3
oil - 1 tbl sp
ginger, finely chopped - 1/2 inch
dark curry leaves - 1 spring
garlic flakes, finely chopped - 6
turmeric powder - 1/4 tsp
salt to taste
METHOD:-
1. Heat oil in a frying pan, fry sliced onions on a medium heat till golden colour and fragrant.
2. Add chopped garlic, ginger & curry leaves. Fry for 3-4 mins until fragrant.
3. Add turmeric pow and fry for 2 mins.
4. Add Kundapur masala pow n stir well for 2 mins.
5. Add boiled egg pieces and salt to taste.. Do not add water. Cover with a lid & stir occasionally & cook on a low heat for 8-10 mins until dries.
