SPINACH-MUSHROOM LASAGNA !!!



Lasagna is an Italian dish which is a complete meal by itself. I just love its cheesy texture. This recipe originally demands sweet corn in it. But as i didn't hv sweet corns at home, i skipped this & added extra mushrooms in it. & i more some more changes too in this recipe which i will mention later.



INGREDIENTS;-

lasagna sheets - 6  
Grated mozeralla cheese - 8 tbsp


 ( i used the above lasagna sheets)

For filling:-

spinach, chopped - 4 cups

mushroom, diced - 1 cup
cooked corn kernels - 1/2 cup (i skipped this) 
tomato puree - 1/2 cup
oil - 3 tbsp
garlic, minced - 2 tsp
onion, chopped - 1
green chilly, minced - 2tsp
salt & pepper - to taste                                             

For sauce:-

 milk - 300ml

carrot - 1
onion - 1
celery - 1 stalk ( i skipped this)
 mace - 1 piece ( i used 1/2 tsp nutmeg powder here)
bay leaf - 1
butter - 4 tbsp
maida - 4 tbsp
chopped parsley - 4 tbsp
Salt & pepper

Method:-

Soak lasagna sheets in hot water for minimum 20 mins.

How to make filling:

Cut mushrooms into thin slices. & finely chop spinach & wash it & keep aside. 

Heat the oil in a fry pan.

Fry garlic+chopped onion+green chilly  till light brown.

Add  mushroom and spinach.

Sprinkle with little salt and keep covered till the vegetables are cooked.
Add tomato puree, corn, salt and pepper.
Simmer for 2-3 minutes and remove from fire.


How to make sauce:

Heat milk in a m/w safe container.

Chop carrot and onion.

Add these to milk along with mace and bay leaf. 
Bring to a boil and remove from fire.
Strain after 1/2 hr. ( i didn't do this. what i did is i added other ingredients directly to this mixture).
Make white sauce with this milk, butter and Maida. & add salt and pepper to taste. Add parsley.


LAYERING LASAGNA:-

1. Grease an 8-inch square baking dish with butter.
2. Spread a thin layer of sauce in it.
3. Arrange a layer of lasagne sheets over it.
4. Spread with 1/2 the spinach mixture.


5. Arrange another layer of sheets over it
6. And top with remaining spinach mixture.
7. Pour white sauce on it.
8. & sprinkle grated mozeralla cheese on it.


9. Arrange final a layer of sheets. Pour the sauce on top.
10. Sprinkle with grated cheese.
11. Dot with 1 Tbsp of butter .


And microwave it for 12 minutes or bake it in hot oven at 200*c till golden brown.


 Now, allow it to stand for 5 more mins in m.w.
Take it out from m/w & your SPINACH-MUSHROOM LASAGNA is ready to serve.

Note:- If you are adding sweetcorn to this lasagna, then add 1/2 cup of sweet corn along with spinach & mushroom & cook .


Serve hot.

and here's a tip:-

For better taste, let it set for 8 to 10 hrs in baking tray. Then cut into pieces & heat it in m/w while serving & serve hot.
