OREO LAVA CAKE !!!!!!


I tried many recipes using oreo biscuis like oreo shake, 5 min oreo cake which tasted like brownie etc. Next in my to do listt is oreo cheeswe cake. This time i tried OREO LAVA CAKE. I adopted this recipe from the blog BETTER BUTER. If you make & store chocolae balls in freezer, then you can make it within a minute. A must try recipe, am sure kids will love it & an perfect dessert for kids parties.




INGREDIENTS:-


Oreo biscuits - 3
milk - 5 tblsp
baking powder - a pinch
dark chocolate - 100 gm
water - 30ml




METHOD:-



  1. As a preparation step, heat the water and melt the dark chocolate in it.
  2. Once the chocolate completely melts, turn off the flame and transfer the content to a bowl. Cover the bowl with a cling wrap and allow it to cool overnight.
  3. Scoop out the dark chocolate mixture and make them into balls. These can be frozen and stored for later usage.
  4. In a mixer jar, add the oreos, milk and baking powder. Grind it till everything is combined well together.
  5. Transfer half of the mixture into a cup cake mould. Place one of the previously prepared chocolate balls in the centre.
  6. Pour the remaining oreo mixture into the mould and microwave the cake at full power for 1 minute.
  7. Serve it hot with vanilla ice cream.

And here's an tip:-


Do not over cook the chocolate mixture as it might solidify.

EGGLESS MILK POWDER CAKE !!!!!


Baking time again....i had a milk powder packet, so searched cake recipes using milk powder. Got this recipe. But in a hurry i thought this is eggless butterless cake recipe. But came to know whille mixing ingredients. Anyways, wanted to try it, so tried. Came out really good.

I adopted this recipe from the blog SIMPLY DELICIOUS.


Ingredients:
  • All-purpose flour (Maida)-1cup
  • Milk powder-1/2 cup
  • Sugar powdered -1/2 cup
  • Oil-1/2 cup (i used butter)
  • Milk-1/2 cup
  • Baking powder-1/2tsp
  • Baking soda-1/4 tsp
  • Vanilla essence-1/2tsp
  • Cashewnuts-1tbs broken pieces (i skipped this)



Preparation:

 Mix Maida, baking powder, Baking soda together in a mixing bowl.
 Preheat the oven at 350 degree F.
 Add milk powder, sugar powder, and oil into Maida mixture.
 Add milk and vanilla essence, cashew nuts and mix it nicely.  
 Pour the mixture into greased baking tray.
 bake  for 20 to 25 minutes. if the cake is done by
 inserting a toothpick in the center of the cake.
 it should come out clean.let it cool completely then cut into pieces.

   Enjoy your egg less milk powder cake with your family.

MOLTEN LAVA CAKE !!!!!!!!


I tried different recipes of making molten lava cake but using my old microwave oven but failed...finally got a recipe using nutella & succeeded. But some where i felt this is not exact or perfect recipe for molten lava cake. So, thought will try it once i get m/w oven with convension mode. By the grace of God, i got it & tried some cake recipes too & they came out very well. SO, thought this time will try molten lava cake. Actually every time i was thinking before baking cake that i should first see a video about baking cake. (i am a big fan of SHOW ME THE CURRY.COM videos)So, searched in you tube for molten lava cake. & got one easy recipe & tried it. Actually in video the guy said preheat the oven for 232*C. But in my oven the option is maximum 200*C. So, i baked it for few more mins. I mean for 13 mins. Tasted great but the base doesn't baked perfectly. So, i couldn't take it out from the mould. Ate it in the mould itself.  Ate it hot & must say tasted yummyyyyyy...still my mouth is watering by thinking about it. Second time baked it for 20 mins. Base was baked but molten lava cake  became little dry. I wanted creamy texture inside. & one more thing...in original recipe choco chips are used. I searched for it but couldn't get it here. So, i used dark chocolate instead of choco chips. Will reduce baking time next time & let you know. Anyhow, my son liked it ver much. So, thought of posting it. & here is the result.
I adopted this recipe from CUP CAKE TINS ! A must try recipe for cake & chocolate lovers.



INGREDIENTS:-                         
Choco chips or Dark chocolate(chopped into bits) - 3/4 cup
white sugar powder - 3/4 cup
vanilla essence - 1tsp
egss - 4
all purpose flour - 1/2 cup
butter - 1/2 cup



What is double boiler ?

A double boiler is simply a pot of water with a bowl sitting on top. This allows gentle heat into bowl without scratching/burning.

METHOD:-

1. In a double boiler, add butter & choco chips & melt it completely.
2. In a bowl, break all the eggs & beat it well till it becomes frothy.
3. Now add sugar pow & vanilla essence & beat well.
4. Now add all purpose flour & blend it well. Cake batter is ready now.
5, Preheat the oven to 450*F or 232*C. (i preheated it in 200*C for 10 mins.)
6. Greese the mould & dust it with cocoa powder.
7. Pour the batter into this & bake it for 8 mins.( i  baked it for 20 mins at 200*C. But after seeing result, i thought should have baked it for 17 mins)
8. Unmould it & dust it with cocoa powder if you want.
9. Eat it hot & you will love it for sure.







Again tried baking chocolava cake...this time, preheated oven for 20 mins at 200*C & baked first batch for 14 mins at 180*C & baked 2nd batch for 13 mins at 200*C & further baked for 4 mins at 180*C. Below are the pictures...

SPONGE CAKE (NO ADDED BUTTER/OIL/GHEE) !!!!!!!


Baking time again !!!!! Today i baked sponge cake & i adopted this recipe from one of my favourite blog NIYA'S WORLD. What i liked in this recipe is no butter/oil/ghee is required. Simply amazing na...some where i felt could have baked for few more mins. Neverthless tasted yumm ! A must try recipe for those who are interested in baking.

Ingredients                                                           

90 g flour (¾th cup + 1 tablespoon)
½ teaspoon baking powder
1 pinch salt
120 g sugar (3/4th cup)
2 eggs (net weight is 105 g)
2 tablespoon ice cold water
1 teaspoon lemon juice


Method

Grease baking dish with 1 teaspoon butter and dust with 1 tablespoon flour (sprinkle about 1 tablespoon of flour inside a cake pan and shake to coat all greased surface. Turn pan upside down to tap out the excess flour ).

Sieve thrice flour, baking powder and salt.

Preheat oven (OTG) at 180 *C or 350 *F.

In a bowl, beat eggs and sugar until creamy and smooth (use electric beater). Add 2 tablespoon ice cold water and beat until smooth and creamy.

Now add sieved flour in 3 batches. Mix well with a thick tablespoon (do not use electric beater at this stage) until well combined and without any lumps (till smooth and creamy).

Finally add 1 teaspoon lemon juice and mix well with a thick tablespoon.

Final procedure:

Transfer this cake mixture (3/4th level of the pan) into a greased baking pan - ring, square or round (or paper lined) or loaf pan.  Spread evenly with a spatula, and bake at 180 * C or 350 * F for 30 - 35 minutes or till golden brown or till a skewer inserted in the centre comes out clean / leaves from the sides of the pan. Keep aside to cool for one hour.

SONO BROWNIES !!!!!!!!



Today i am going to explain you about yummilicious chocolate brownies that i baked. Actually mu hubby gifted me a new oven with convection mode on xmas day. I was eagerly waiting for this oven, Coz i wanted to bake brownies, cookies, bread, puffs, pav etc. But when i got this gift from hubby some how i got busy in other works & forgot about baking. But one thing stucked in my mind that my hubby wanted me to bake brownies from my new oven. So, decided to bake chocolate brownies on valentine day. & i bought all the ingredients a day before vday. & on feb 14th , when searching for all the ingredients to make brownie i realised that i bought everything except the main ingredient maida...such a dumb i am...so, thought will prepare it next day. Next day when i was searching for the recipe i saved in my mobile, by mistake i deleted that recipe. & could not bake brownies that day too coz of my foolishness. Then again i searched for perfect & easy recipe to make brownie. & i got the recipe from my favourite blog GEETHS DAWATH. So, i decided i will bake it tomorrow. But morning it flashed to me that today is Maha Shivrathri i. e. on 17/02/14. & i am using eggs in brownie. So, dropped the plan of baking brwonies that day too. Finally the day of baking came & i baked this brownies yesterday evening & i. e. 18/02/14. & thank God ! it turned out yummilicious !
   
      But i made slight changes in ingredients...i used finely chopped dark chocolates instead of chocolate chips. & i used salted butter instead of unsalted butter & salt. & i baked brownies for 50 mins instead of 30 mins.

Ufffffffffffff....finally i baked chocolate brownies or sono brownies in my new oven & here i am sharing pics & recipe of sono brownies baked by me with my like minded friends. Hope everyone will like it. Waiting for the feed back...

BTW,  Geeths dawath mentioned that she adopted recipe from EASY COOKING.



INGREDIENTS:-

Flour-1/2 cup
Cocoa powder-1/2 cup
Salt-1/2 tsp
Baking powder-1/4 tsp
Baking soda-a pinch
Unsalted butter-1/2 cup /1 stick / 100 gm (or use salted butter & skip salt)
Sugar- 1 cup
Light corn syrup or honey- 1 tbsp
Eggs-2 
Vanilla essence-1tsp
Choco chips-1 cup OR dark chocolates, finely chopped - 150 gm



METHOD:-


  • Sieve all the dry ingredients and keep it ready.
  • Grease/line a 8 inch square baking tin .
  • Preheat the oven at 180 d C.
  • Melt butter in a microwave or flame.
  • Add sugar and honey/corn syrup together.
  • Add eggs 1 at a time and whisk it.
  • Add sieved dry ingredients little by little and beat it .
  • Add vanilla essence and fold in the choco chips or finely chopped dark chocolate.
  • Mix it lightly without over beating.
  • Pour the batter into the greased dish.
  • Bake it in the oven for 30 minutes or until done. (i baked for 50 mins).
  • Cool it for 20 minutes approx.
  • Loosen the sides and unmould the brownies.
  • Cut it as desired.
  • Best relished with vanilla ice cream, chocolate sauce & lots of roasted nuts.

    CREAM GHEE CAKE !!!!!!


    I adopted this recipe from the blog CHEENA CHATTI.  In original recipe it is baked in conventional mode but i baked it in m/w mode for 5 mins. Surprisingly it came out very well. So thought of sharing it with you guys.

    Ingredients

    All purpose flour - 3/4 cup
    Eggs - 2 In room temperature
    Fresh cream - 1/4 cup
    Sugar - 1/2 cup
    Melted and cooled ghee - 4 table spoon
    Baking Powder - 3/4 teaspoon



    METHOD:-


    1. Sieve all purpose flour with baking powder thrice and keep it aside.
    2. Powder sugar in a mixer and transfer it to a big bowl. Add melted ghee and beat with a wooden spoon until the structure turns creamy.
    3. Add 1 egg at a time and beat. Then add fresh cream and mix well. At last add sifted all purpose flour spoon by spoon and mix carefully.
    4. Preheat the convection oven in 180 degree.
    5. Grease a cake tin and dust with flour and remove the excess flour. Pour the batter to this tin.
    6. Bake for 30 minutes in 180 degree. ( here i baked cake in m/w mode for 5 mins.). Remove the tin to a wire rack and cool it.  Run a knife along the sides of the cake tin to De-mold the cake.
    7. Decorate it with whipping cream or chocolate Ganache of your choice.

    MICROWAVE COFFEE WALNUT/CASHEWNUT CAKE !!!!!!


    My today's recipe is from the blog BBC GOODFOOD. Original recipe demands walnuts but i substituted cashew nuts with walnuts. You can make simple coffee cake too with icing or nuts & you can enjoy it with vanilla ice cream too . I made icing when the cake was still hot.  So, icing has melted but tasted really good. I think this is the yummiest  coffee cake i have ever made. Coffee lovers must try this recipe.



    INGREDIENTS:-


    • 85g very soft butter
    • 85g golden caster sugar
    • 2 eggs, beaten
    • 85g self-raising flour
    • 2 tsp instant coffee powder
    • small handful walnut pieces (optional)

    For the butter cream

    • 1 tsp instant coffee powder
    • 1 tsp milk
    • 25g very soft butter
    • 100g icing sugar


    METHOD:-


    1. In a medium bowl, beat the butter and sugar together until light and fluffy. Gradually add the eggs followed by the flour and instant coffee. Stir most of the walnuts/cashew nuts (if using) into the batter, reserving a few for decoration. Transfer to a microwave-proof dish 

    2. Cook on full power for 2 mins. Reduce the power to medium and cook for 2 mins. )After 4 mins, check to see if the cake is cooked – it should be risen and spring back when touched. If it needs a bit longer, cook on medium for 1 min more at a time, checking after each minute until the cake is cooked. Remove and allow to cool. ( here, i baked cake 5 mins on full power



    3. Meanwhile, make the coffee butter cream. Dissolve the coffee in the milk, then add the butter and icing sugar. Beat until smooth, spread over the cake 


    4. And top with the reserved walnuts/cashew nuts.
