MIXED KAALU PALYA

I am backkkkkk...updating blog after 2 years....uffff...hello friends...hwr u all ??? Feeling great tobe in touch with you all again πŸ‘

My today's special recipe is from Karnataka "mixed kaalu palya". Kaalu means pulses. Here, we use 4 types of pulses I. e. Green gram, Kabuli Chana, black eyed peas & grean peas. We soak them & cook them & blend them in masalas to make a healthy & delicious curry which will be dry & goes well with rotis/dosa/rice. I adopted this recipe from LIFE IS MARVELOUS. 


Ingredients needed:

1 small cup Hesaru KaaLu ( Green gram )

1 small cup Kadale Kaalu ( Kabuli Chana )

1 small cup Alasande KaaLu ( black eyed peas )

1 small cup Bataani ( Green peas )

1 big onion or 2 small onions — finely chopped

1 big tomato or 2 small tomatoes — finely chopped

Seasoning :

3 tspns -> Oil

Mustard seeds – 1 spoon

Cumin seeds – 1 spoon

Chana dal – 1 spoon

Urad dal – 1 spoon

Byadgi Chilli – 1 broken into 2 slits

Green chillies – 4 to 5 ( based on spicy levels consumed at home )

Red chilli powder – 1 to 2 tspns

Salt as required

Method:

[1] Soak all the pulses mentioned above like green peas, Green gram, Kabuli Chana, black eyed peas overnight.

[2] Boil all the pulses soaked, in pressure cooker upto 2 whistles and cool.

[3] Now take a pan and season the ingredients mentioned under seasoning, add, Chopped Onions and fry till little golden color and then add tomotoes chopped and fry till tomatoes fully get cooked, it gets mushy at this stage, now add boiled pulses, chilli powder, salt and close the lid.

Let it cook for 3-4 mins.. At this stage, check and stir well to avoid bottom of the pan getting burnt..

This goes well with Chapathi and dosas.

CHILLY CHEESE TOAST !!!!!


My son was craving for this & i had mozzarella cheese lying in my fridge. So,, decided to try both grilled & tawa version. I liked grilled version very much & my son liked tawa version. What i felt is i should have added little oregano & few chilly flakes to the mixture.  You can serve it as starter or for evening snacks or for kids lunch box.





INGREDIENTS:-




Bread – 6 slices
Cheese – 100gm (I used mozzarella), grated
Green Chillies – 1 (thin long variety)
Green Capsicum – half
Italian Seasoning 1/2 tsp
Chilly flakes - 1/2 tsp
Butter - 2 cubes (i used salted amul butter cubes)
Salt – if needed


METHOD:-



1. Cut green chillies finely, chop the capsicum – set aside. 
2.Take grated cheese in a bowl and mix green chillies, italian seasoning , chilly flakes and capsicum with it.
(Quantity shown here is after applying mixture to 3 bread slices)

3. Take the bread slice and apply butter to both sides.
4. Now apply the cheese chilli mixture. 



HOW TO GRILL ?


 Meanwhile preheat oven at 200 deg C for 3mins and grill it at the same temperature for 11 mins.
Cut diagonally n serve wid tomato ketch up




TAWA METHOD:-


Heat tawa and apply butter to both sides of bread and toast bread slices from one side.
Now keep flame low and turn bread slices to another side & apply chilly cheese mixture.
Now close the lid and turn the flame off when cheese completely melts (it will take 5 mins on low flame).
Cut diagonally n serve wid tomato ketch up.

NOTES:-


1. You can add one more green chilly minced to make it little spicy.
2. Or you can sprinkle oregano and chilly flakes while serving.

GRILLED MINT CHUTNEY & CHEESE SANDWICH !!!!!!!


I adopted this recipe from EDIBLE GARDEN. Its a simple, easy to make delicious sandwich. Kids will love it for sure πŸ‘ An ideal dish for kids lunch box. As my son loves sandwiches very much, i keep trying different recipes. 

Ingredients:

8 slices of bread of your choice
4 slices of cheese
For the Mint Chutney:
A bunch of fresh mint leaves
1/2 cup freshly grated coconut
1 green chilli
1/2 tsp minced garlic (optional)
A pinch of dry ginger powder or 1/2″ piece of fresh ginger
Salt to taste



METHOD:

Grind all ingredients together with very little water to a smooth paste.

To assemble and toast the sandwiches: Spread a generous amount of the mint chutney on one side of the bread slice. Top with a slice of cheese and toast in a sandwich maker until done. You can also toast in a pan on the stovetop with a pat of butter until both sides are golden brown and the cheese has melted. Or grill them in sandwich maker.

Serve mint chutney cheese sandwiches hot with ketchup.

MAYO EGG SANDWICH !!!!!!!!!!


Today i am gonna post simple breakfast recipe using bread, egg & mayyonise. Actually this is my own recipe :P Recently my attended a cooking competetion & he brought back the thinks he used there such as milkmaid, bread, mayyonise, salt, sugar, biscuits etc. So, i was thinking about using them. Son told he will make his special laddoos using milkmaid for me, so now my aim is to finish bread & mayyonise. Suddenly i realised that i never prepared sandwiches using eggs. So, thought will scramble eggs & will use mayyonise too for sandwiches. I usually mix well eggs+salt+red chilly powder/pepper powder+1 tsp water in a bowl & then i prepare scrambled eggs. This time i decided to add chopped coriander leaves & chole masala powder & dried basil leaves too & it tasted yum ! So, here is jhatpat recipe of mayo - egg sandwich.


(scrambled eggs)


INGREDIENTS:-                                                                               


bread slices - 4                                                                         mayyonise - 1 tbl sp
oil - 2 tsp


To scramble:-


eggs - 2
coriander leaves, chopped - 1tbl sp
water - 2 tsp
chole masala pow - 1/2 tsp
pepper pow - 1/2 tsp
dried basil leaves - 1/2 tsp
salt to taste


METHOD:-

1. In a bowl mix well all the ingredients mentioned under "to scramble".
2. Heat oil in a non stick pan & pour mixture & make scrambled eggs & keep aside.
3. Cut the edges of the bread slices.
4. Apply mayyonise on one side of each bread. 
5. Fill one bread slice with scrambled eggs & close it with another bread slice.

Note:-


You can apply mayyonise on one bread slice  & tomato ketch up on another bread slice depending on your taste.

FRENCH CHEESE TOAST !!!!!!!


French cheese toast...a yummy, easy to make snack for kids. 

INGREDIENTS:-

bread slices - 2
egg - 1
cheese cube - 1 (i used amul)
butter as required
red chilly powder as per taste
salt to taste



METHOD:-

1. Cut the sides of the bread slices & make triangles.
2. Beat the egg. Add red chilly powder & salt to that & beat again.
3. Heat the pan, add butter, dip the bread slices(2) in egg batter & place it on pan.
4. When cooked properly, turn it to another side. Sprinkle grated cheese on it.
5. When cooked properly, take out from pan & place it on a plate.(cheese part should be upside).
6. Dip another 2 slices of bread in egg batter & shallow fry on both sides.
7. Now place these bread slices on the other 2 bread slices. 
8. Serve it with tomato ketch up.

SWEETCORN MAYO SANDWICH !!!!!


My today's recipe is from 4TH SENSE COOKING.  This is an easy & yummilicious sandwich. A must try one. 


Ingredients:

Sweet corn(de-seeded) - 1 cup
Capsicum(bell pepper) - 1 small
Tomato - 1 large
Mayonnaise - 3 tblsp
Black pepper powder - for taste
Salt - for taste 



Method:

Pressure cook corn cobs and de-seed it. 

Chop capsicum and tomato into small cubes. 

Take the corn and chopped veggies in a bowl and add mayonnaise, salt and pepper and give a good mix.

Keep this in the refrigerator for ten mins. 

Apply butter on bread and pan roast it until golden brown. 

Now sandwich it by spreading a generous amount of corn mayo and enjoy eating :)

Simple and tasty corn and mayo sandwich is ready :)

and here's a tip:-

Add veggies of your choice for the filling. 

You can also toast the sandwich in a toaster. 

You can also eat the corn and mayo mix just like a salad :)

GRILLED CABBAGE-TOMATO SANDWICH !!!!!!


INGREDIENTS:-

Bread slices - 4
cabbage , shredded - 1/2 cup
tomato, finely chopped - half
lemon juice - 1/4 tsp
salt to taste
CORIANDER LEAVES CHUTNEY - 4 tbl sp
butter - as needed

METHOD:-

1. In a bowl mix well shredded cabbage+tomato+lime juice+salt to taste.
2. Apply coriander leaves chutney 1 tblsp each on all the bread slices.
3. Place one bread slice by facing chutney side up , spread cabbage mixture upon it & close it with another bread slice. Repeat same for other two bread slices.
4. Grill it for 6 mins or till done.
5. Serve hot.

COLESLAW SANDWICH !!!!!!!


My todays recipe is from TARLA DALAL's blog. Its a kind of sandwich which is used to serve cold. Original recipe demands lettuce leaves & cheese slices but i didn't add as i am running out of stock. Still tasted great.


Ingredients

8 slices of white bread
50 gms mayonnaise
6 tbsp grated carrot
6 tbsp shredded cabbage
6 tbsp finely chopped lettuce ( i skipped this)
4 cheese slices (i skipped this)
1 lemon
salt and black pepper pow to taste



METHOD:-



  1. Cut the edges of the breads.
  2. Apply little mayonaisse on each slices. Keep aside.
  3. In a mixing bowl, combine the carrots, cabbage and lettuce.
  4. Add 2 tbsp of mayonnaise, lemon juice, pepper and salt, mix well.
  5. Keep it aside for 5 min.
  6. Put one cheese slice on a bread spread top (i didn't add) with mayonnaise mixture and put the second bread on top.
  7. Repeat the same to make more sandwiches.
  8. Serve cold.

CLUB SANDWICH !!!!!!!!!

INGREDIENTS:-


6 slices of bread, toasted
2 tbsp coriander chutney
2 tsp Amul cheese spread (optional)


For the 1st filling


8 slices of unpeeled cucumber
8 slices of tomatoes

For the 2nd filling


3 tbsp chopped capsicum
1/4 cup chopped carrots
1/2 tsp chilly sauce
1/2 tsp soya sauce
salt to taste
1 tsp oil



Method

    For the 2nd filling:-

    1. Mix together all the ingredients in a bowl except oil .
    2. Heat a non-stick pan and  add oil.
    3. Add all the ingredients in the bowl & fry till capsicum changes its colour & Keep aside.

    How to proceed

    1. Apply little chutney on all the toasted bread slices and keep aside.
    2. Place a toasted bread slice on a flat dry surface, put the mixer on it. Cover with another toasted bread slice with the chutney side facing up.(apply amul cheese spread on the other side of this bread for better taste).
    3. Place a lettuce leaf(optional), 4 slices cucumber and 4 slices of tomatoes on it and cover with the third toasted bread slice.
    4. Repeat with the remaining ingredients to make 1 more sandwich.
    5. Cut each sandwich into 2 equal portions and serve immediately.
