SWEET LASSI USING CONDENSED MILK !!!!!


My son gave me this idea lassi using condensed milk. He said using milkmaid thickens the lassi. So tried it & liked it too.

INGREDIENTS:-

thick curd , chilled- 1 cup
condensed milk - 1/4 cup

METHOD:-

1. In a mixer jar, add curds & condensed milk & run it till you get foam on the top.
2. Pour it in a glass & serve chilled.

and here's an tip:-

1. You can add chocolate/strawberry syrup while beating for different flavours.
2. Try adding different drinking powders like horlicks, bournvita etc.

EGGLESS CARAMEL CUSTARD !!!!!!


I adopted this recipe from SARITHA BHAT. I felt this is nothing but mishti doi recipe, only we have to add caramalised sugar coating on it. Still it tasted great as usual. Those who don't eat eggs can definately give it a try. 


          (I used above ingredients for eggless caramel custard)

INGREDIENTS:-

sugar - 1/4 cup
thick milk - 3/4 cup
thick dahi - 3/4 cup
condensed milk - 3/4 milk
cournflour - 2 tblsp
vanilla essance - 1/4 tsp



METHOD:_

1. Mix together sugar and 2 tablespoons of water and heat in a pan. Allow it to boil and lower the heat and cook till it becomes dark brown in colour. 
2. Now pour the caramel in a round tin and spread it along the tin. 
3. In another bowl mix together  milk+ thick dahi or yogurt,+condensed milk+ cornflour+vanilla essence. Mix everything well. 
4. Pour this mixture over the caramel and steam in a steamer for 30 mins.
5. Check with a fork whether the custard has been cooked properly. If the fork comes out clean it means it is done.
6. Allow it to cool and then refrigerate for an hour. 
7. Slowly pour the custard on a serving tray and cut into desired shape and serve chilled.

OATS KHEER !!!!!


OATS KHEER...i cant say this is for diet concious people coz i have added milkmaid & dry fruits roasted in ghee into it :P But i can say diabitic peaple can have it coz i made it less sweet & added chopped banana while sevring. In original recipe said to add sugar & dates but i skipped both & added milkmaid & added more milk too. It tasted awesome ! You can it it hot or chilled.  I adopted this recipe from Anjali Singh, SMART COOKY,  NDTV food



INGREDIENTS:-

Oats - 1 cup
milk - 1 ltr
condensed milk - 200 gm or 1/2 tin
almonds & cashewnuts, chopped - a handful
ghee - 1 tblsp
raisins - 15
bananas, chopped - as desired




Method

Roast oats for 4 to 5 minutes.

In a pan add milk, sugar, cardamom, dates, almonds and raisins. Boil for about 5 minutes.

Add oats and let it boil until it becomes thick.

Once the kheer is done add fruits if you like and serve hot or cool.

ALMOND BASUNDI !!!!!!!


I adopted this recipe from AMGELE RANDAPAAKUDA which is posted by SHWETHA AMITH PAI.  Must say very easy to make & yummy to eat,

Ingredients:-

3 cups water or 750 ml
4 tablespoons corn flour
1 tin nestlé fat free sweetened condensed milk or 405 g
¼ cup ground almonds or 25 g
1 teaspoon lemon juice
½ teaspoon ground cardamom
6 tablespoons pistachio nut or 50 g, crushed (optional for garnishing)

METHOD:-

In a medium sauce pan whisk Water and Corn flour, add NESTLE Fat Free Sweetened Condensed Milk and bring to a boil over medium heat, about 10 minutes.
Add Almond Powder, Lemon Juice, Cardamom and cook for another 5 minutes.
Remove from heat and transfer to individual serving dishes and allow to cool slightly.
Optionally decorate with crushed nuts before serving.

MALAI PEDA / INDIAN CREAM FUDGE !!!!!


I adopted this recipe from COOK REPUBLIC. Prepared it for diwali but forgot to post it. So, posting it now....better late than never. And one more thing ,  my peda became little harder as quantity of malai i added is little less than mentioned in the recipe. So, please take care of it while making.

Ingredients

 
4 cups full cream milk powder
1 cup granulated raw sugar
300ml thickened cream
1/2 tablespoon ghee
slivered pistachio and saffron strands for decorating
 

Method

 
Combine milk powder, sugar and cream in a large microwaveable bowl. Microwave uncovered (my power setting is 1100 watts) for 3 minutes. Remove, add ghee, mix lightly. Microwave uncovered for another 3 minutes.
 
Remove and place tablespoons of mixture in a silicone mini muffin pan. Set aside  or chill for 10 minutes. Turn out the pedas (fudge rounds). OR  roll them into balls and gently flatten them to get the round cookie shape. ( i followedthe second step).

MAWA KHEER !!!!!

Ingredients for Mawa Kheer

-Chironji
-Kesar (Saffron)
-Makhana
-Kishmish (Raisins)
-Kaju (Cashewnuts) chopped
-Badam (Almonds) chopped
-Elaichi (Cardamom) Powder
-NESTLÉ MILKMAID Sweetened Condensed Milk
-Milk
-Ghee









































How to make Mawa Kheer


  1. Mix together NESTLÉ MILKMAID Sweetened Condensed Milk and milk, add saffron and keep aside.
  2. Heat ½ tbsp ghee and fry the makhana for a minute, remove from pan. Cool and crush it. Heat remaining ghee and fry all the dry fruits till golden brown.
  3. Add the crushed makhana and fried dry fruits to the MILKMAID - milk mixture and bring to a boil, simmer till thick and creamy. Add the elaichi powder, mix well and remove from fire. Serve hot or cold.

MY 300TH POST.....EASY CHOCOLATE PUDDING !!!!!!


My 300th post is my own recipe & that too of my favourite chocolate flavour  I really can't believe this that my blog has reached another mile stone !!! Yes, easy chocolate pudding is my own recipe & this is awesome in taste. So, you can consider this as my treat for reaching a new mile stone ;)

INGREDIENTS:-

milkmaid(sweetened condensed milk) - 1 tin (400 gm)
gelatin - 3 tbsp
milk - 2 tin
cashew nuts - few for garnishing

For chocolate sauce:-

water - 1/4 cup
sugar - 1/3 cup (powdered)
cocoa powder - 2 & 1/2 tbsp
butter - 1/2 tbsp



METHOD:-

1. Let us make chocolate sauce first....Mix cocoa pow+water+powdered sugar+butter well in a vessel.
2. Heat a kadai & pour this mixture & keep stirring until the mixture becomes thick like sauce. keep this aside.
3. Dissolve gelatin 1/4 cup hot water & keep aside
4. Mix milkmaid+milk & boil them in a thick bottomed pan till it becomes creamy.
5. Now add the gelatin & chocolate sauce mixture & mix & stir well for 2-3 mins.
6. Pour this in a serving bowl & let it come to room temperature.
7. Now keep it in fridge.
8. Once the pudding sets, cut it into desired shapes & garnish it with cashew nuts.

POTATO KHEER !!!!!!!


My today's recipe is from the food group in FB called Amgele Randpakuda & it is posted by Nutan Shenoy Kini who is my sweet, cute & talented FB friend also. According to her in Maharashtra, this kheer is prepared during fast & they call it as "Upasachi kheer". Very easy, simple, delicious & must try recipe.
BTW, today is my son's bday & kheer is his most favourite dessert. So, prepared this kheer for him.

INGREDIENTS:-

milk - 1 ltr
milk maid - 1 tin (395 grams)
potatoes - 2 big
cardamom pow - 1 tsp
nutmeg powder - 1/2 tsp (optional)
ghee - 2tsp
dry fruits - 1 handful



METHOD:-


1. Boil  milk. 
2. De skin and grate potatoes. Squeeze. Saute a little in  pure ghee. 
3. Later add chopped dry fruits in same ghee & keep aside. 
4. Now add the sauteed potatoes+cardamom pwd, +Milkmaid, and boil well. 
5. Garnish with dry fruits and serve. 
6. Upasachi kheer is ready.You can add 1/2 a teaspoon of powdered jaiphal (nutmeg) too.

QUICK & EASY RABDI !!!!!!


I adopted this recipe from one food group in FB called Konkani Amchi Food. & this recipe s posted by Yogitha Kamath. We can call it as INSTANT RABDI too.  In these pics you can't see badams but later i added crushed badam too for better taste. Taste bhi health bhi.

INGREDIENTS:-

milk - 2 cup (thick & creamy)
milkmaid - 2 tbsp
sugar - 1 tbsp (or according to your taste)
white bread - 2 slices (crushed well in a mixer)
cardamom pow - 1/4 tsp
kesar - few strands for garnishing
almonds, crushed - 10




METHOD:-

1.  Boil the milk,  add slowly the bread crumbs, mix & Stir well ,so that lumps do not form.
2. Add milk maid,again mix well on slow fire,add sugar according to your taste, Let it cook for 2 mins.
3. Switch off the flame,add kesar & eliachi powder & mix well.
4. Garnish it with kesar strands.
5. Chill it & serve it.

and here's a tip:-

1. If the milk is not so thick add 4 bread slices & 4-5 tbsp milkmaid & 2 tbsp sugar as i did here.
2. For extra taste add crushed almonds & mix well. Chill it & serve it.
