DULCE DE LECHE(PRESSURE COOKER METHOD) !!!!


DELCE DE LECHE is my most favourite flavour in ice creams...especially Ideal ice cream, Mangalore prepapres tastiest Dulce de leche ice cream. I eat minimum 4 scoops of that ice cream to satisfy my taste buds :P  Always wondering how they make that flavour & what are the ingredients they use to make Dulce de leche. One day one of my facebook friend(sadly i forgot her name) posted  pressure cooker method of making Dulce de leche. I was delighted to see this simplest method & delighted to know only condensed milk is required to make DDL. First time, i cooked condensed milk for 45 mins & got dulce de leche not so dark in color. Next day cooked for 1 hr after taking a whistle & it turned out little dark & i realised that we get darker dulche de leche as we cook it for longer time. Yoy can see the difference in the below picture clearly .

Now lets come to the point...below is the pressure cooker method of making DDL.

INGREDIENTS:-


Condensed milk - 1 tin

METHOD:-


1, Please remove the plastic lid of  CAN as shown   in the picture & place it in the cooker as shown & pour water on it atleast one inch above the Can.     
2. Close  pressure cooker with its lid & place weight on it. 
3. Take one whistle & simmer the flame & cook for 45 mins to one hr to get darker dulce de leche.
4. Switch off the gas & open the pressure cooker lid when pressure releases & takeout the can.
5. Keep it in room tempurature for whole night.
6. Next day morning open the can & enjoy delicious Dulce de leche.

Note:-

1. You can eat DDL the way it is or you can make ice cream, cakes, desserts, toffees from it or you can spread it on bread also. Kids will love it for sure.

2. If you want to store it for long time, then transefer it to airtight container & store it in refrigerator.

SWEET LASSI USING CONDENSED MILK !!!!!


My son gave me this idea lassi using condensed milk. He said using milkmaid thickens the lassi. So tried it & liked it too.

INGREDIENTS:-

thick curd , chilled- 1 cup
condensed milk - 1/4 cup

METHOD:-

1. In a mixer jar, add curds & condensed milk & run it till you get foam on the top.
2. Pour it in a glass & serve chilled.

and here's an tip:-

1. You can add chocolate/strawberry syrup while beating for different flavours.
2. Try adding different drinking powders like horlicks, bournvita etc.

EGGLESS CARAMEL CUSTARD !!!!!!


I adopted this recipe from SARITHA BHAT. I felt this is nothing but mishti doi recipe, only we have to add caramalised sugar coating on it. Still it tasted great as usual. Those who don't eat eggs can definately give it a try. 


          (I used above ingredients for eggless caramel custard)

INGREDIENTS:-

sugar - 1/4 cup
thick milk - 3/4 cup
thick dahi - 3/4 cup
condensed milk - 3/4 milk
cournflour - 2 tblsp
vanilla essance - 1/4 tsp



METHOD:_

1. Mix together sugar and 2 tablespoons of water and heat in a pan. Allow it to boil and lower the heat and cook till it becomes dark brown in colour. 
2. Now pour the caramel in a round tin and spread it along the tin. 
3. In another bowl mix together  milk+ thick dahi or yogurt,+condensed milk+ cornflour+vanilla essence. Mix everything well. 
4. Pour this mixture over the caramel and steam in a steamer for 30 mins.
5. Check with a fork whether the custard has been cooked properly. If the fork comes out clean it means it is done.
6. Allow it to cool and then refrigerate for an hour. 
7. Slowly pour the custard on a serving tray and cut into desired shape and serve chilled.

EGG & CAPSICUM MASALA !!!!!


Today again a recipe with eggs as i am a egg lover :P. EGG CAPSI MASALA...i adopted this recipe from my gorgeous friend Sandhya N. Kamath who is a capsicum lover :D I just loved this recipe very much. My son too liked it coz he is a capsicum lover too :P. It goes well with rice or rotis.



INGREDIENTS:                     eggs, boiled - 6
                          
 
onion, chopped - 2 medium
tomatoes, chopped - 3 big
capsicum, cubed - 1 big
ginger-garlic paste - 1&1/2 tsp
turmeric powder - 1/2tsp
chole masala pow - 1 tsp
salt to taste

FOR PASTE:-

A handful of cashewnuts soaked in milk for 15 mins
guntur chillies - 4
green chillies - 2

FOR GARNISHING:-

Chopped corriander leaves 
kasoori methi (i skipped this)




METHOD:-

1. Heat oil in a pan & put ginger garlic paste & fry.
2. Add chopped onions till light brown.
3. Add tomatoes & fry till mushy.
4. Add cubed capsicum & fry.
5. Meanwhile make paste of soaked cashewnuts+guntur chillies+green chillies & add dis to the pan & fry this for sometime.
6. Add turmeric pow & chole masala pow to this & mix well.
7. Now add boiled eggs & take a boil.
8. Now swicth of the stove & garnish it with corriander leaves & serve hot.

OATS KHEER !!!!!


OATS KHEER...i cant say this is for diet concious people coz i have added milkmaid & dry fruits roasted in ghee into it :P But i can say diabitic peaple can have it coz i made it less sweet & added chopped banana while sevring. In original recipe said to add sugar & dates but i skipped both & added milkmaid & added more milk too. It tasted awesome ! You can it it hot or chilled.  I adopted this recipe from Anjali Singh, SMART COOKY,  NDTV food



INGREDIENTS:-

Oats - 1 cup
milk - 1 ltr
condensed milk - 200 gm or 1/2 tin
almonds & cashewnuts, chopped - a handful
ghee - 1 tblsp
raisins - 15
bananas, chopped - as desired




Method

Roast oats for 4 to 5 minutes.

In a pan add milk, sugar, cardamom, dates, almonds and raisins. Boil for about 5 minutes.

Add oats and let it boil until it becomes thick.

Once the kheer is done add fruits if you like and serve hot or cool.
