IDLY BURGER !!!!!!!


IDLY BURGER...sounds interesting na ! Actually it's a fusion food. Kids usually dont wana eat idly, dosas. & they love to eat burger any time. But burger buns are not that healthy. So, i substituted them with idlies :P . Patties are readily available in markets now a days. But i made it at home & followed my own recipe & it tasted good too. First thought will not add cornflour to the patty dough , But while frying everything got  seperated. & rava went bottom of the kadai. Then added cornflour to the patty dough & dipped the patty in the cornflour paste too & it came out nicely. But it looks like more roasted, actual fact is all coz of my previous disaster. The rava which went bottom of the pan coated with other patties too. So, please don't go by looks, prepare it & just enjoy the taste. 



INGREDIENTS:-

For burger patty:-

potato, boiled, peeled & mashed - 2 medium
onion, finely chopped - 1 medium
capsicum, finely chopped - 1/2
green chilly, finely chopped - 1
ginger- garlic paste - 1 tsp
garlic cloves. minced - 8
salt to taste
cornflour - 2 tsp
bombay rava - as required
oil for deep frying



Method:- 

1. Heat oil in a pan & add ginger garlic paste & fry for a while. Now add garlic, green chilly, onions, capsicum & fry for 2 mins on a medium flame.
2. Take a bowl & add mashed potatoes+all the ingredients in pan +salt+1 tsp cornflour & kneed it well
3. Make double the lemon size balls from dough & gently press them in between your palms.
4. Make very thin paste from rest cornflour & dip this patty in that paste.
5. Roll the patties on bombay rava & keep aside.
6. Heat oil in a kadai & deep fry the patties one by one.
7. When done take out from oil & keep them ready in a plate.

Note:- You can added cooked fresh/frozen green peas & grated carrots to the patty dough for extra taste.


INGREDIENTS IDLY BURGERS:-                                  

Now patty is done. Choose idlies according to moulds you have used. Will post the pics next to it.

Idlies - 2 OR 4
patties - 2
cheese slice - 2
tomato ketch up - as required
tomato slice - 2
ghee - 2tsp
lettuce leaves (i skipped this)
tooth pic - 2


  (If you are using these type of idly moulds, then use 2 idlies. Slice them into 2 & use)


   (If you are using these type of idly moulds, then use 4 idlies)

METHOD:-

1. Heat non stick tawa & spread a tsp of ghee on it. 
2. Now place idly slices/idlies on them.
3. Apply ghee  on upper sides too. & shallow fry them till golden brown.
4. Now take them in a plate & apply tomato ketchup on one side.
5. Place one tomato slice on one idly slice & then one patty & then one cheese slice & close it with another idly slice, tomato ketchup part down. 
6. Repeat same for another 2 idly slices.
7. Insert tooth pic on both & serve.

NOTE:- If you are using lettuce leaves place them before tomato slice.

MUSHROOM CHILLY !!!!!!


I am very happy that today i am posting my hubby's favourite recipe. I adopted this recipe from my fav blog VEG RECIPES OF INDIA. Here i added capsicum too to enhance the flavour & taste. & one more reason is my son loves capsicum very much. A best starter for rainy season for veg lovers.


INGREDIENTS (measuring cup used, 1 cup = 250 ml)
  • 200 to 250 gms white button mushrooms or baby portabella mushrooms, about 7 to 8.5 ounces
  • 1 medium onion or 1 to 2 spring onions whites, halved or quartered and the layers removed, reserve the greens for garnish
  • 2 to 3 green chilies, slit
  • 1 small capsicum or red/green/yellow bell pepper (optional), chopped into squares
  • 7-8 garlic cloves/lahsun, finely chopped
  • 1 inch ginger/adrak, finely chopped
  • 1 tbsp naturally fermented soy sauce or as required
  • ½ tbsp sesame oil or any veg oil for the sauce
  • ½ to ¾ tsp corn flour
  • 1 to 2 tsp water
  • ½ to 1 tsp sugar or as required
  • salt and pepper as required
  • oil for deep frying the mushrooms
for the batter
  • 5 to 6 tbsp whole wheat flour or all purpose flour
  • 3 tbsp corn flour
  • ¼ tsp black pepper or add as required
  • salt as required
  • water as required to make a medium consistency batter




INSTRUCTIONS
  1. rinse and wipe dry the mushrooms. trim the stalks.
  2. halve them if big in size and quarter them if smaller in size.
  3. make a flowing medium consistency batter with the ingredients listed above "for the batter".
  4. heat oil for shallow frying in a kadai or wok.
  5. dip each mushroom slice in the batter and coat uniformly with the batter.
  6. add them to the medium hot oil and fry till they are slight golden and crisp.
  7. fry the mushrooms in batches and drain on paper towels to remove excess oil.
  8. in another wok or pan, heat sesame oil.
  9. add the onions (and capsicum if adding them) and stir fry on medium or high heat for a minute.
  10. add the ginger, garlic and green chilies. stir fry on a high flame till you see the onions getting browned at the edges.
  11. add the soy sauce, salt, sugar, pepper and stir fry for half a minute.
  12. add the fried batter coated mushrooms and stir on a low to medium flame
  13. sprinkle about 1 to 2 tsp water and ½ to ¾ tsp corn flour on the mushrooms.
  14. saute for a minute or two. continue to stir. this gives a nice glaze to the mushrooms.
  15. switch off the flame and serve the chili mushroom hot with veg fried rice, bread or even chapatis or naan. you can also garnish with spring onion greens while serving.

TAWA PULAO !!!!!!!!


TAWA PULAO...one of Mumbai's famous street food. I adopted this recipe from one of my favourite blog FLAVORS AND COLORS. An ideal rice dish for lunch box.

Ingredients                                                                             

2 cups Basmati  rice 
1 onion large sized  
1 capsicum medium sized finely chopped 
2 tomatoes medium sized finely chopped 
1 tsp cumin seeds 
1 cup mixed vegetables, boiled
1 1/2 tsp ginger garlic paste 
1/2 tsp chili powder 
1/2 tsp turmeric powder 
1 tbsp pav bhaji masala 
1/2 tsp garam masala 
2 tbsp butter + oil 
Salt as per the taste
Sugar as per the taste(i skipped this)
1 tbsp lemon juice  



Method:

Cook the rice separately and keep it ready.

In a wok, heat butter + oil. Add cumin seeds and when they crackle add ginger garlic paste, finely chopped onions. Saute on medium heat till the raw smell disappears. Add chopped tomatoes and saute them till they turn mushy. Next add finely chopped capsicum and saute it for a minute. Add turmeric powder, chilli powder, garam masala, pav bhaji masala powder saute for few minutes. Add boiled veggies and mix well till the veggies get nicely combined with spice mix. Sprinkle some water if the mixture starts sticking at the base of the wok. Add cooked rice, chopped coriander leaves, lemon juice, salt as per taste and sugar [optional step I usually do for my kids]. Mix everything well and cook it with covered lid on sim flame for 5 minutes. Switch of the flame. Garnish with finely chopped coriander leaves, raw chopped onions and lemon wedges. Serve it hot with raita/ papad.

CHICKEN HOTDOG !!!!!!


I am really happy to say that this hot dog is prepared by my son. He started showing his interest in cooking when he is 3 yrs old & started helping me when he is only 8 yrs old. He also loves to do experiment in cooking. He invented his own recipes like Lays chat etc. He makes delicious ambuli pachchudi which is very popular among amchis. He helps me in baking cake also.

INGREDIENTS:-

hot dog bun - 2
chicken sausages - 4
tomatoes, sliced as halves - 2
onions - 1 ( optional ) ( i skipped this)
mustard sauce - as required
mayyo garlic sauce - as required
red chilly sauce - as required
tomato ketch up - as required
processed cheese - as required.

METHOD;-

1. Microwave chicken sausages on high for 1 min.
2. Cut the hot dog bun horizontally & place processed cheese slices & 2 sausages . Close the bun & m/w it for 1 min or till the cheese melts.
3. Now take out the sausages. Place tomato & onion slices on the melted cheese & then sausages.
4. Now add all type of sauces & close it with upper bun.
5. Enjoy your easy, quick & simple chicken hot dog.

EGG OMELET !!!!



EGG OMELET...i always like to eat egg omelets at road side carts. They make very tasty omelets. But few days back i went to Club Mahindra, Coorg resort to celebrate my bro's 2nd daughter's bday. There at breakfast i ate a very tasty omelet. There are 3 types of omelets there. 1. Masala omelet 2. Cheese omelet 3. Plain omelet. I liked the masala omelet very much with loads of green chillies in it. I didn't asked them for recipe but i observed their way of making omelet & decided to make it at home. I don't know which oil they used but i always prefer coconut oil for omelets. So, i used coconut oil here. It tasted almost similar so, i am sharing this recipe with you all.



INGREDIENTS:-

eggs - 3
green chillies, finely chopped - 2
salt to taste
oil - 2tsp (i used coconut oil)
milk ( boiled & warm) - 1 tsp


METHOD:-

1. In a bowl break the eggs. Add finely chopped green chillies+salt to taste+milk.

2. Beat it with hand beater well.


3. Now heat the non stick pan. Rub oil on it & pour the beaten mixture on it. & turn the flame to medium. Let it cook for sometime.

4. When it becomes almost hard fold the sides as shown in the below picture.

5. Flip it over & let it cook for sometime on low flame.

6. Now switch off the stove & transfer it to a serving plate.

7. Eat it hot.

EGG BURGER !!!!!


Today i prepared EGG BURGER...it was soooo yummyyyyy. Actual recipe i adapted from KHANA KHAZANA. But i made slight changes in recipe & used the ingredients i had at home. Like i used Amul cheese spread instead of mayo & i skipped the ingredients cheese slice & lettuce leaf coz i didn't have them at home. And i applied cheese spread+red chilly sauce mixture on both slices of bun. And i used fried onions & tomato slices on both the sides. But i just forgot to grill the bun :( Anyways, will present here what ever i prepared today :D



INGREDIENTS:-

Fried Egg - 1
Oil - 1tsp
Burger bun - 1
Amul cheese spread - 1 tbsp
Red chilly sauce - 1 tbsp
salt to taste
Tomato slices - 2
Onion, thinly sliced - 1 big
Toothpick - 1



METHOD:-

1. How to make fried egg ???

Heat a non stick tawa. Apply oil on it. Break a egg on this tawa & sprinkle pepper powder+salt to taste. & fry on both sides.

2. Put a tsp of oil in a nonstick pan & fry thinly sliced onions in it until light brown in colour.

3. Mix Amul cheese spread+red chilly sauce very well.

4. Cut the burger buns into halves like in the below picture.

5. How to assemble the burger ?????



     a. Spread 1 tbsp cheese spread+red chilly sauce mixture on one  slice of burger. (as shown in the above pic no.1)
     b. Top it with fried onions & then a slice of tomato & then fried  egg & again with a slice of tomato. (as shown in the pics 2, 3,        4 & 5)
     c. Spread remaining cheese-sauce mixture on another slice of   burger. (as shown in the pic 6)
     d. Top it with remaining fried onions. (as shown in the pic 7)
     e. Close the burger with this slice of bun. (as shown in the pic 8)
     f. Insert a toothpick on the top of burger bun (as shown in the    pic 9)
     g. Now your burger is ready to eat. (as shown in the pic 10).

BREAD CUPPIZZAS !!!!!!



INGREDIENTS:-

Bread slices - 6
Onion - 1 small, finely chopped
Capsicum - 1/2, finely chopped
Sweet corn kernels - 1/4 cup
Tomato Sauce - to taste
Pizza Seasoning / Red chili flakes - a little
Cheese - 2 cubes, grated




METHOD:-

1. Cut the bread slices into round shapes using a container lid or anything similar that can be used to cut.
2. Make sure these rounds just a little bigger than the round of your muffin/cup-cake tray.
3. Slightly flatten out these little round pieces using a rolling pin.
4. Apply butter on the outer sides of these slices and place them in the muffin tray.
5. Smear a little tomato sauce in each little bread cups.
6. Arrange some chopped onions, chopped capsicum and some corn kernels in each and top it with grated cheese.
7. Gently took them in the tray, and make sure they are slightly caved in, to give a cup-like formation in the tray.
8. Sprinkle some pizza seasoning and red chili flakes.
9. Bake the cuppizzas for 2 minutes of till the cheese has melted well and the bread begin to turn brown.
