BANANA KHEER !!!!!!


Kheer is my son's all time favourite & i love to try new new type of kheers, This ime i got banana kheer recipe from AWESOME CUISINE. Made many dishes like buns, sheera , podis n all using banana but made this awesome banana kheer for the first time. Believe me it tasted excellent ! I added horlicks powder too to enhance he taste of kheer .


INGRDIENTS:-                                                                

Riped bananas, finely chopped- 6 small
Raw rice - 1/2 cup ( i used basmathi)
Milk - 4 cups
Sugar - 1/2 cup
Almonds, chopped - 2 tblsp
Cashew nuts, chopped - 2 tblsp
Horlicks powder - 18 gms



METHOD:-

1. Dry roast the rice & grind it to course rava like consisency.
2. Mix this with milk & cook until mushy.
3. Add sugar & bring to a boil.
4. Add horlicks powder & mix well.
5, Add the chopped bananas & mix well & bring it to boil.
6. Heat ghee in a small pan & shallow fry chopped almonds & cashewnuts till light brown.
7. Add them to kheer & mix well.
8. Serve it hot, warm or chilled.

STRAWBERRY KHEER !!!!!!!


Today i came up with some unique recipe STRAWBERRY KHEER. I adopted this recipe from TARLA DALAL. 

INGREDIENTS:-


Strawberries, chopped - 1/2 cup
strawberry puree - 1/2 cup
cornflour - 2tsp
cold milk - 2tblsp
full fat milk - 3 cups
sugar - 1/2 cup
cardamom pow - a pinch


METHOD:-


1. Combine the cornflour & cold milk in a bowl, mix well & keep aside.
2. Boil the milk in a deep pan on a high flame, which will take approximate 5 to 6 mins while sirring twice inbetween.
3. Lower the flame & cook for 5 to 6 mins, while stirring continuously.
4. Add the cornflour milk mixture & sugar, mix well & cook on a low flame for 7-8 mins while stirring continuously & scrapped the side of the pan.
5. Add the cardamom powder, mix very well & cook on a medium flame for a few seconds.
6. Switch off the flame, add the strawberry puree & strawberries, mmix well & cool slightly.
7. Allow the mixture to cool completely. 
8. Refrigerate atleast 1/2 an hour & serve chilled.

OATS KHEER !!!!!


OATS KHEER...i cant say this is for diet concious people coz i have added milkmaid & dry fruits roasted in ghee into it :P But i can say diabitic peaple can have it coz i made it less sweet & added chopped banana while sevring. In original recipe said to add sugar & dates but i skipped both & added milkmaid & added more milk too. It tasted awesome ! You can it it hot or chilled.  I adopted this recipe from Anjali Singh, SMART COOKY,  NDTV food



INGREDIENTS:-

Oats - 1 cup
milk - 1 ltr
condensed milk - 200 gm or 1/2 tin
almonds & cashewnuts, chopped - a handful
ghee - 1 tblsp
raisins - 15
bananas, chopped - as desired




Method

Roast oats for 4 to 5 minutes.

In a pan add milk, sugar, cardamom, dates, almonds and raisins. Boil for about 5 minutes.

Add oats and let it boil until it becomes thick.

Once the kheer is done add fruits if you like and serve hot or cool.

ZUCCHINI KHEER !!!!!!!


I adopted this recipe from the blog MANJULA'S KITCHEN. 

Ingredients:
  • 1 Zucchini
  • 1 1/2 cups Whole milk
  • 1 1/2 cups Water
  • 1/2 cup Sugar
  • 3 to 4 spoons Semolina / sooji rava
  • Pinch of salt
  • 2 Cardamom
  • 2 Cloves
  • Few strands of saffron (optional)


Method
  1. Peel the zucchini and cut into medium size cubes.
  2. Add water to chopped zucchini and bring to boil.
  3. Once the zucchini cubes are half cooked, add milk, sugar and pinch of salt.
  4. Wash the semolina and drain all the water. Add this to the boiling Kheer and mix it well so that no lumps are formed.
  5. Boil this Kheer for 6 – 7 minutes. If you wish, add few strands of saffron while boiling. This will give a nice aroma and color to the Kheer.
  6. Powder the cardamom seeds and cloves finely.
  7. Before switching off the flame, add the powdered cardamom and cloves and stir it once.
  8. Serve the Kheer hot or cold. For garnishing, you can you some dry fruits if you want.


and here's a tip:-
  1. Same way, you can prepare Kheer with bottle-gourd also.
  2. Semolina will thicken the consistency. If you want the Kheer to be more thicker, increase the quantity of semolina.
  3. Adding 1 – 2 spoons of jaggery along with sugar will give a nice taste to this Kheer.

MAWA KHEER !!!!!

Ingredients for Mawa Kheer

-Chironji
-Kesar (Saffron)
-Makhana
-Kishmish (Raisins)
-Kaju (Cashewnuts) chopped
-Badam (Almonds) chopped
-Elaichi (Cardamom) Powder
-NESTLÉ MILKMAID Sweetened Condensed Milk
-Milk
-Ghee









































How to make Mawa Kheer


  1. Mix together NESTLÉ MILKMAID Sweetened Condensed Milk and milk, add saffron and keep aside.
  2. Heat ½ tbsp ghee and fry the makhana for a minute, remove from pan. Cool and crush it. Heat remaining ghee and fry all the dry fruits till golden brown.
  3. Add the crushed makhana and fried dry fruits to the MILKMAID - milk mixture and bring to a boil, simmer till thick and creamy. Add the elaichi powder, mix well and remove from fire. Serve hot or cold.

SOYA COCONUT MILK KHEER !!!!!!


My today's recipe is from SULEKHA.COM. Soya chunks are high in protiens & good for health. So. we can call it as healthy kheer.

 Ingredients

Soya chunks - 1 cup
Coconut ( grated ) - 1 cup
Sugar - 1 cup
Cashew - 5
Badam - 5
Pista - 5
Raisins - 10
Saffron - a few strands
Milk - 1/2 litre
Ghee - 2 tsp



Method

1. Extract milk from coconut.
2. Soak soya chunks in boiling water for half an hour..  
3. Drain water, crumble and set aside.
4. Boil soya chunks with milk in a heavy bottomed pan.
5. When soya is cooked, add sugar.
6. When sugar dissolves, add coconut milk, saffron and remove pan from the stove. 
6. Cut cashew, badam, pista into pieces.
7. Heat ghee in a frying pan.
8. Add cashew, badam, pista, raisins, fry and add to the payasam.

PHOOL MAKHANA KHEER / LOTUS SEEDS KHEER !!!!!



My today's recipe is from CHEF AND HER KITCHEN. It tastes almost like angoor rabdi. Yummmmm !
According to her, lotus seeds/makhana is a good source of calcium and also you can make various items like kheer,snack or curry with it.It is mostly used during fasting days especially in north India.This kheer is very easy to prepare and it is very light and tasty.

Ingredients:

1 cup Phool makhana/Puffed lotus seeds
1/2 litre full fat milk/low fat milk
5-6 tbsp Condensed milk or 1/4 cup Sugar ( i added condensed milk + 3tsp sugar)
2-3 tbsp chopped Cashewnuts
2 tbsp chopped Almonds
1 tsp Pistachios,sliced(for garnish)(optional)
15-18 Raisins
1/2 tsp Elaichi powder ( i skipped this)
6-7 strands of Saffron
2 tbsp Ghee


METHOD:-
  • Boil milk until it reduces to half and thick by stirring it occasionally taking care that the milk does not get burnt at the bottom.
  • Tear puffed lotus seeds into halves using knife or hands.( i skipped this step)
  • Heat ghee in a small kadai and add chopped almonds and cashew nuts and fry until light golden brown and remove them into a plate.
  • Add raisins and fry until they bubble up and remove them aside.
  • In the remaining ghee add the torn puffed lotus seeds and fry until they are slightly crisp and light brown in color.
  • Take half the portion and grind it to a fine powder.
  • Add the remaining half fried lotus seeds and ground lotus seeds powder to the milk and boil until it is soft,it takes around 7-8 mins.
  • Add condensed milk(or sugar) to it and also the saffron strands(dissolved in 2 tsp milk) to it and boil for 5-7 mins.
  • Add elaichi powder to it and also fried dry fruits to it and boil for 2 mins.
  • Pour into individuals bowls.Garnish with finely sliced pistachios.
  • Serve it hot/warm/cold.

Notes:
  1. You can avoid grinding lotus seeds,but I recommend to do this as it gives the thickness to the kheer.If you wish you can even add 1/2 tsp cornflour (mixed with 1 tbsp milk) to the milk while it is boiling for thickness.
  2. You can use condensed milk or sugar according to your choice.Also add the required quantity of condensed milk/sugar according to your preference.
  3. Though we add less ghee,it floats on top giving us a feeling of rich dessert.

CHICKOO - ALMOND KHEER !!!!


I adopted this recipe from Tarla Dalal but i made slight changes in recipe according to our taste. Like quantity of sugar, chickoos used etc. Instead of walnuts i used almonds here. This kheer has an amazing taste when serve chilled. BTW, kheer is my son's most favourite dessert.



Ingredients


1 tsp ghee
6 tsp rice (chawal) , washed and soaked
1500 ml milk
6 tsp sugar ( i used 14 tsp sugar here)
12 walnuts (akhrot) , roasted and crushed ( i used almonds here)
chickoo, made into pulp ( i used 5 chikoos here)

For Garnishing
few roasted walnuts (akhrot)( i skipped this)



Method


  1. Heat the ghee in non stick pan and add the rice. Saute for 2-3 minutes till the ghee is absorbed.
  2. Add 1000 ml of milk and boil for 14-15 minutes or till rice is cooked.
  3. Add the sugar, remaining 500 ml milk and crushed walnut.
  4. Boil for 5-6 minutes or till becomes thick.
  5. Remove from flame, cool and add chiku pulp. Mix well.
  6. Chill in refrigerator for half an hour.
  7. Served chilled garnished with walnut pieces.

POTATO KHEER !!!!!!!


My today's recipe is from the food group in FB called Amgele Randpakuda & it is posted by Nutan Shenoy Kini who is my sweet, cute & talented FB friend also. According to her in Maharashtra, this kheer is prepared during fast & they call it as "Upasachi kheer". Very easy, simple, delicious & must try recipe.
BTW, today is my son's bday & kheer is his most favourite dessert. So, prepared this kheer for him.

INGREDIENTS:-

milk - 1 ltr
milk maid - 1 tin (395 grams)
potatoes - 2 big
cardamom pow - 1 tsp
nutmeg powder - 1/2 tsp (optional)
ghee - 2tsp
dry fruits - 1 handful



METHOD:-


1. Boil  milk. 
2. De skin and grate potatoes. Squeeze. Saute a little in  pure ghee. 
3. Later add chopped dry fruits in same ghee & keep aside. 
4. Now add the sauteed potatoes+cardamom pwd, +Milkmaid, and boil well. 
5. Garnish with dry fruits and serve. 
6. Upasachi kheer is ready.You can add 1/2 a teaspoon of powdered jaiphal (nutmeg) too.
