PENNE PASTA IN WHITE SAUCE !!!!!!


My today's recipe is inspired from food blog LILY LUNA. I skipped few ingredients like chicken broth etc & substituted milk instead of it. & used italian seasoning which comes with Dominoz pizza instead of  dried parsley. An ideal dish for Potluck, kitty parties, kids bday parties. & i used button mushrooms & frozen green peas too.


INGREDIENTS:-


1 Lb penne pasta
3 tblsp butter
3 tblsp all purpose flour
2 cup milk
1/2 cup grated amul cheese
8 sliced button mushrooms
1/2 cup frozen green peas, boiled
2 tsp minced garlic
1 or 2 tsp Italian seasoning
salt & pepper to taste


METHOD:-


1. Cook pasta according to package directions.
2. Melt butter in a medium sauce pan & add garlic. Cook for 1 minute over medium heat.
3. Add sliced mushrooms & cook over low/medium flame for 2 mins(close lid)
4. Add flour & cook for an additional minute stirring contantly.
5. Add milk stirring constantly until sauce boils & thickens. Add boiled green peas.
6. Add italian seasoning & parmesan cheese, Add desired quantity of salt & pepper. Stir continuousely until cheese melted.
7. Pour sauce over pasta & serve. OR mix boiled pasta in sauce well & serve.

CHILLY CHEESE TOAST !!!!!


My son was craving for this & i had mozzarella cheese lying in my fridge. So,, decided to try both grilled & tawa version. I liked grilled version very much & my son liked tawa version. What i felt is i should have added little oregano & few chilly flakes to the mixture.  You can serve it as starter or for evening snacks or for kids lunch box.





INGREDIENTS:-




Bread – 6 slices
Cheese – 100gm (I used mozzarella), grated
Green Chillies – 1 (thin long variety)
Green Capsicum – half
Italian Seasoning 1/2 tsp
Chilly flakes - 1/2 tsp
Butter - 2 cubes (i used salted amul butter cubes)
Salt – if needed


METHOD:-



1. Cut green chillies finely, chop the capsicum – set aside. 
2.Take grated cheese in a bowl and mix green chillies, italian seasoning , chilly flakes and capsicum with it.
(Quantity shown here is after applying mixture to 3 bread slices)

3. Take the bread slice and apply butter to both sides.
4. Now apply the cheese chilli mixture. 



HOW TO GRILL ?


 Meanwhile preheat oven at 200 deg C for 3mins and grill it at the same temperature for 11 mins.
Cut diagonally n serve wid tomato ketch up




TAWA METHOD:-


Heat tawa and apply butter to both sides of bread and toast bread slices from one side.
Now keep flame low and turn bread slices to another side & apply chilly cheese mixture.
Now close the lid and turn the flame off when cheese completely melts (it will take 5 mins on low flame).
Cut diagonally n serve wid tomato ketch up.

NOTES:-


1. You can add one more green chilly minced to make it little spicy.
2. Or you can sprinkle oregano and chilly flakes while serving.

MOZZARELLA MACRONI & CHEESE !!!!!!!


OK....we prepared starter for mansoon & a side dish for roti especially for kids lunch box. Now how about a dish for weekend ?? Mansoon started & weather is chilled & just imagine we are eating hot & cheesy pasta on a weekend sitting quietly & enjoying every bit of it. Woooooow, yummy for tummy na. Yesssss, you guessed it correct. Today we are going to preapare cheesy pasta...MOZZARELLA MACRONI & CHEESE.

I adopted this recipe from BETTY CROCKER.

Ingredients

2
cups uncooked elbow macaroni
2
tablespoons butter
2
tablespoons Gold Medal™ all-purpose flour
1
teaspoon salt
1
teaspoon grated or very finely chopped garlic
2
cups milk
2
cups shredded mozzarella cheese (8 oz)
1/4
cup chopped fresh basil leaves( i used dried one)


Directions

  • 1 Cook and drain macaroni as directed on package.
  • 2 In 10-inch skillet, melt butter over medium heat. Using whisk, stir in flour, salt and garlic. Cook 2 to 3 minutes, or until mixture smells nutty and is lightly golden, stirring constantly with whisk.
  • 3 Add milk. Continue to beat with whisk, scraping bottom of skillet until mixture heats to boiling. Mixture will thicken. Remove from heat; add cheese and basil. Stir with whisk until smooth. Stir in drained macaroni.
  • 4 Serve with additional basil leaves if desired.

SPINACH-CORN PASTA !!!!!!!


My today's recipe is from NAN'S YUM YUMS. Original recipe demands mushroom but i replaced sweet corn with mushroom here.


Ingredients

Pasta - 2 cups (You can use any kind of Pasta. I used Bowtie pasta)
Spinach Puree - 2 cups (I blanched two bunches of spinach and blended it with little water to get a puree of thick consistency)
sweet corn - 1 cup
Onion - 1 medium
Garlic - 5-6 pods
Butter - 2-3 1-inch sized cubes
Italian Seasoning - 2-3 tsp
Red Chilli Flakes - 2 tsp
Olive Oil - 1/2 tbsp
Cheese - 1 cube(i used 2 tbsp Amul cheese spread here)



METHOD:-
  • Cook the pasta as per instructions in the packet. Strain and keep aside.
  • In a m/w safe bowl add sweet corn & 1 cube butter & m/w it for 3 mins.
  • Slice the onions and crush the garlic pods. If you have a garlic crusher, use that, else just finely mince it using the knife. 
  • In a pan, heat olive oil and toss in the garlic and onions. Saute till they turn light brown. 
  • Pour in the spinach puree and sweet corn & amul cheese spread & mix well.
  • Add salt, Italian seasoning and red chilli flakes. Keep the pan covered and allow the mixture to cook for about 1 minute.
  • Now, add the cooked pasta. Gently combine all the ingredients and allow to cook for a minute or two more on low flame.
  • Serve hot.

ROSE PANACOTTA !!!!!!


Panacotta is an Italian dessert which tastes just like amchi duddali. Earlier i tried Mocha panacotta & posted it in my blog too. This time i tried Rose Panacotta. I just followed the recipe of Vanilla panacotta...only i replaced vanilla essence by rose syrup & the result is too good.

INGREDIENTS:-

Fresh full fat cream - 1 cup (250 ml) ( i used Amul)
Full cream milk - 1 cup (250 ml)
sugar - 1/2 cup
rose syrup - 2tsp
Gelatin - 1 tsp
water - 2-3 tbsp

METHOD:-

1. Mix the gelatin powder in 2 tbsp of hot water.
2. In a non stick add milk & cream together & bring the mixture to a boil on low flame.
3. Add sugar to it & also rose syrup to the mixture & mix well until the sugar dissolves.
4. Add the melted gelatin to the mixture & mix it well immediately.
5.  Pour the mixture into the mould ( i used a plastic bowl) & let them come to a room temperature.
6. Cover it with clean wrap & keep it refrigerated for a minimum of 5-6 hrs or you can keep it overnight.



7. Next day demould it & serve it chilled.

MOCHA PANACOTTA !!!!!


I adapted this recipe from a food group in FB called Konkani Amchi Food posted by Sandhya Pai. Actually "panacotta" is an Italian dessert which is almost similar to amchi duddali :D There are different flavours in panacotta like strawberry, mango, chocolate, mocha etc. Today i prepared "Mocha panacotta" that is of coffee flavour. Very very easy to make and taste too good. My son finished this dessert within 5 mins.



INGREDIENTS:-


Instant coffee powder - 1 tablespoon
Dark chocolate,grated - 50 grams
Milk - 3/4 cup
Cream - 3/4 cup
Brown sugar - 4 tablespoons
Gelatin, soaked in water - 1 1/2


Method:-


1. Heat milk and cream in a non stick pan. 
2. Add dark chocolate and instant coffee powder and mix. Stirring till the chocolate melts. 
3. Add the brown sugar and stir till the sugar melts. 
4. Add gelatin and mix till everything is well blended.



5. Cool and strain through a fine sieve. (i skipped this step).
6. Pour into small bowls or stemmed glasses or moulds. 



7. Place them in the refrigerator to set for at least 2 hrs.




 8. De-mould it.




9. And serve chilled or serve in the same container.

BROCOLI-GREEN PEAS AU GRATIN !!!!!!


BROCOLI-GREEN PEAS AU GRATIN....I adapted this recipe from REKHA ACHARYA & she posted it in a food group called KAF. I have added capsicum instead of mushroom & it tasted good. And i microwaved it for 10 mins instead of baking.

INGREDIENTS:-

brocoli florets - 12-15
fresh/frozen green peas - 1/2 cup
mushroom/capsicum, sliced - 200 gm
onion, sliced - 1
butter - 2 tbsp
garlic cloves, finely chopped - 3-4
maida - 1-2 tbsp
milk - 1/2 cup
salt, pepper, Italian seasoning - to taste
cheese - a slice ( i used Amul cheese slice)
mozzarella cheese, grated - 5 tbsp 



METHOD:-

1. Parboil some green peas and broccoli with little salt and keep aside.
2. In a sauce pan add butter,then add a sliced onion & fry it till golden brown.
3. Then add finely chopped garlic and sliced mushroom/capsicum & cook for about a minute.
4. Add salt,pepper powder,Italian seasoning and 1-2 tbsp maida and mix well.
5. Now add abt 1 1/2 cup milk and stir till it gets thick.
6. Now add a slice of cheese and you get a creamy sauce.
7. Pre heat the oven at 180 deg C.
8. In a baking casserole drizzle little olive oil,arrange half of the green peas and broccoli,then mushrooms.capsicum with white sauce and again the green peas and broccoli.top it with grated mozzarella cheese.
9. Bake it at 180 deg C for abt 20 mins or till the upper layer turns golden brown and bubbly.rest it for 10 mins. OR m/w it for 10-12 mins.(i followed the 2nd method).
10. Serve hot.
