RED BELL PEPPER HALWA !!!!


My todays recipe is from the blog FLAVORS AND COLORS. Believe me i was not sure about the taste until i tried it.  It tasted just like carrot halwa & was awesome in taste.


INGREDIENTS:- 

Red bell pepper(capsicum), grated - 1/2 cup                            
milk - 1 cupsugar - 1/2 cupcardamom powder - 1/2 tspghee - 2tblsp


METHOD:-


1. Wash, clean, cut & deseed the capsicum. Grate it & squeeze the water out & keep it aside.
2. Heat ghee in a pan. Add grated capsicum & saute it for a minute
3. Now add the milk & bring it to a boil. Simmer the flame & continue cooking till the milk is reduced almost to a dry mixture.
4. Add sugar & mix it well. Keep stirring at intervals until all the water evaporates & the mixture starts leaving the sides of the pan.
5. Add the cardamom powder & mix it well.
6. Switch off the flame & garnish with the nuts of your choice.

PINEAPPLE SHEERA 2 !!!!!




My dear friend Suphala gave me recipe of this pineapple sheera as it is my hub's most favourite & this reciped tasted awesome ! Hub is so lucky that now he get eat his fav sheera daily at our restura :P What she suggested me is to add 3 cups of water for 1 cup of rava , so that we get perfect texture. & to boil pineapple pieces  for few mins before adding to rava. Believe me these tips turned out really great & sheera tasted awesome.



INGREDIENTS-


Sooji rava - 1 cup
Ghee - 1/4 cup+2 tsp
Sugar - 1 cup (or as you needed)
Pine apple pieces - 1 cup
Cardamom powder - 1/2 tsp
water- 3 cup


METHODS:-


1. Boil pineapple pieces seperately for few minutes in sufficiant water & keep it aside.
2. Heat 1/4 cup (or as you needed) in frying pan & fry rava for 10-15 mins on medium flame.
3. Now add 3 cups of boiling water to the rava & cook it.
4. Now add cooked pineapple pieces & sugar (if you like sheera more sweet, you can add sugar more then a cup) & mix it well till sugar dissolves.
5. Finally add 2 tsp of ghee & mix again well.
6. Lastly add cardomom powder & mix well. This will give a good texture to the sheera.
7. Now switch off the gas & serve sheera hot.

NOTES:-


1. You can add whole cardomom instead of cardomom powder. Just fry cardomom in ghee then add rava for frying.
2. While serving you can add dry fruits too fried in ghee to make it more healthy & taasty.

WHEAT FLOUR LADDOOS !!!!!!!


WHEAT FLOUR LADDOOS are easy to make with less ingredients. We amchis call it churmundo. If you add more ghee to it while binding, it just melts in your mouth. BTW, you need more prsctice to bind laddoos perfectly. I tried it for only 2 imes & you can see the result :P My dear friend LAXMI SHENOY from bangalore gave me this recipe.





INGREDIENTS:-


Wheat flour - 2 cups
ghee - 1/2 cup & little more if needed
sugar - 1&3/4 cup
cardamom - 6-7
raisins - 2 tbl sp(optional)




METHOD:-


1. Heat 1/2 cup ghee in a thick bottomed pan.
2. Add wheat flour & fry at low flame till you get nice aroma(30-40 mins)
3. Let it cool down.
4. Powder sugar with cardomoms & add it to the wheat flour.
5. Mix well & when completely cools make laddoos.

NOTE:-


You can add raisins too to the laddoos. Fry raisins in a pan for a minute & add at the end. Mix well & make laddoos.

Masala eggs


I adopted this recipe from my fb friend , admin of fb food groups Konkani amchi food & Vinaya's culinary journey VINAYA PRABHU. What i felt after tasting is everyone may not like this recipe as we add wheat flour in this . But you can resuce quantity of wheat flour too. Occasionally can have it with rice or as a starter.


Ingredients: 


boiled eggs 6
Ghee-3tbsps
Wheat flour-3_4 tbsp
Coriander  powder 1tsp 
Turmeric powder  1tsp
Chilli powder 1 tsp
Sambar powder1 tsp
Garam  Masala 1 tsp
Pepper  powder  1tsp
Salt as per taste


Method 


1. Heat ghee in a pan on low flame
2. Add wheat flour and saute till colour changes to  light brown in colour but don't  burn it.
3. Then one by one add all the spice  powder and salt and mix it together
4. If masala is  dry add a little more ghee
5. Then add the whole boiled eggs to masala  and mix it.
6. Serve hot.

MOONG DAL KHICHDI !!!!


 I am posting recipes tried & tasted by me after a long gap. Took a break inbetween 😜 I adopted this recipe from HEBBAR'S KITCHEN. Must say this is healthy & yummy recipe 👍 But in a hurry i forgot to add turmeric powder, hence the colour.


                 (After adding turmeric powder)

Ingredients


  • ½ cup sona masuri rice
  • ½ cup moong dal
  • 1 medium green chili
  • 1 tbsp ginger-garlic paste
  • ½ inch ginger
  • 1 medium tomato
  • 1 medium onion
  • ½ tbsp mustard seeds
  • ½ tbsp jeera
  • pinch hing
  • 5 curry leaves
  • 2 tbsp ghee or oil
  • 3 cups water
  • ½ tbsp turmeric powder

Instructions ( 1 cup =255 ml)

  1. finely chop onion, tomato, ginger, chilli and coriander leaves. keep them aside.
  2. take moong dal and rice in equal proportion.
  3. wash and rinse rice and moong dal. add 3 cups of water to 1 cup of rice and dal combined together
  4. cook it for 3-4 whistles. depending upon your cooker.
  5. meanwhile, heat 2 tablespoons ghee in a pan and add mustard seeds, cumin seeds, curry leaves and hing.
  6. when mustard seeds start spluttering, add onions. saute them till golden brown
  7. once onions turns golden brown, add ginger garlic. fry them till raw smell goes away.
  8. now add chilli and saute for a minute.
  9. add tomatoes and fry on medium flame.
  10. fry tomatoes till they turn mushy.
  11. open your cooker once the pressure is released. add some water if the consistency is thick.
  12. now add the masala over the cooked rice-lentils and mix well.
  13. keep on low flame to simmer the khichdi till you get the right consistency.
  14. yummy, tasty and healthy moong dal kichidi is ready

HORSEGRAM DOSA !!!!!


HORSE GRAM DOSA is a healthy breakfast . This is nothing but our KULTHA RAMDAN recipe only the difference is no need to fermant batter over night & in kultha ramdan, we grind rice coarsely . Here, we grind everything together smoothly. I got this recipe from my gorgeous friend LAXMI SHENOY who is an alrounder. A must try one.


                                                                   (dosa batter)

INGREDIENTS:-

horsegram - 1 cup
urad dal - 1 cup
dosa rice - 2 cup
salt to taste
ghee - as required



METHOD:-

1. Soak horse gram, urad dal & rice together minimum for 3 hours.
2. Wash & grind them smoothly by adding enough water.
3. Take the batter in a bowl. Add salt & mix well.
4. Heat non stick dosa tawa, spread a laddle full of batter , drizzle ghee/oil on it & close the lid.
5. After a while turn it over , when done remove from fire.
6. Serve it hot with chutney/sambar/ any gravy/bhaaji/pickle.

NOTE:- If you are not using batter immediately, then keep it in fridge. Don't fermant it.

ALMOND BURFI !!!!!!!!


This is my 400th post & i can't believe this :P & So, thought will celebrate this with ALMOND BURFIS. I got this recipe from my sweet firend SUPHALA SHENOY who is an cook, loving wife, devoted mother, amazing friend & a good hostess. But my burfis turned little harder as i kept them on stove for little more time. But tasted awesome ! When ever i hear the word BURFI i remenber the hindi movie in which Ranbeer kapoor & Priyanka Chopda acted & my favourate song "ithni si khushi ithni si hasi ithna tukda chaand ka" . Just loved that movie for their pure love. Sorry for going out of topic :P  OK....let's come to the topic now.



INGREDIENTS:-                  

Almonds - 1 cup

milk - 3/4 cup
sugar - 1 & 1/2 cup
ghee - 1/4 cup
cardamom - 4-5



METHOD:-

1. Soak almonds in hot water for 30 mins & peel the skin.
2. In a mixer, powder the peeled almonds adding little milk.
3. Now add sugar & cardomom & grind it further to a smooth paste.
4. In a thick bottomed pan, heat ghee.
5. When it melts, add ground paste & keep stirring till the all moisture is gone & it forms into a ball.
6. Switch off the stove & transfer it to the greesed plate.
7. Let it cool & then cut it into desired shapes & store it in container.

MASSOPPU SAARU !!!!!


Massoppu saaru is a Karnataka delicacy that too B'lore delicacy. We use many varieties of leaves in this dish. That means taste bhi...health bhi. This recipe is in my wish list since long back.Once my best friend's mom made this dish when i recently went to meet her. I just fell in love with it. Actually you should add either BBB powder or rasam powder to it.I mean original recipe demands it. Bur knowing my taste, aunty didn't add. After coming back, i tried both the varieties. But liked aunty's version very much. One more think i felt is i added less bunch leaves. I added one bunch of amarnath leaves, palak leaves, methi leaves each. But i felt i should have added 2 bunches each & a bunch of dill leaves too. In this recipe you should use only leaves, not stems. 


( here i added BBB powder)

INGREDIENTS:-                                                                                     

Toor dal - 1 cup
methi leaves, chopped - 1 or 2 bunch
palak leaves, chopped - 1 or 2 bunch
amarnath leaves(green), chopped - 1 or 2 bunch
dill leaves , chopped - 1 bunch (i didn't add)
onion, finely chopped - 1 medium
tomato, finely chopped- 1 medium
green chillies, slitted  - 2 if spicy, 3 if medium spicy
turmeric pow - 1/2 tsp
salt to taste
coriander leaves, chopped - 1 or 2 tblsp
Tamarind - gooseberry size
BBB pow/rasam pow - 1/2 tsp (optional)
cumin pow - 1/2 tsp

TO TEMPER:-

mustard seeds - 1/4 tsp
cumin seeds - 1/4 tsp
garlic, chopped - 1pod

garlic, smashed - 1 pod
curry leaves - 4 strands
long red chilly - 1
ghee - 1 tblsp

METHOD:-

1. Wash & pressure cook toor dal+all chopped leaves+onion+tomato+green chillies+turmeric pow to 7-8 whistles.
2. Mash them finely.
3. Add tamarind extract, salt to taste, coriander leaves, cumin pow , BBB pow & bring it to boil.
4. For tadka, heat ghee in a pan, splutter mustard seeds, add cumin seeds, garlic chopped & smashed, red long chilly(cut it into 3 pieces), curry leaves & fry until garlic turns light brown.
5. Temper it to dal-leaves mixture & mix well.
6. Serve hot with rice/rotis.

OATS KHEER !!!!!


OATS KHEER...i cant say this is for diet concious people coz i have added milkmaid & dry fruits roasted in ghee into it :P But i can say diabitic peaple can have it coz i made it less sweet & added chopped banana while sevring. In original recipe said to add sugar & dates but i skipped both & added milkmaid & added more milk too. It tasted awesome ! You can it it hot or chilled.  I adopted this recipe from Anjali Singh, SMART COOKY,  NDTV food



INGREDIENTS:-

Oats - 1 cup
milk - 1 ltr
condensed milk - 200 gm or 1/2 tin
almonds & cashewnuts, chopped - a handful
ghee - 1 tblsp
raisins - 15
bananas, chopped - as desired




Method

Roast oats for 4 to 5 minutes.

In a pan add milk, sugar, cardamom, dates, almonds and raisins. Boil for about 5 minutes.

Add oats and let it boil until it becomes thick.

Once the kheer is done add fruits if you like and serve hot or cool.
