ALOO MUTTER !!!!!


First of all i want to say this is not authentic recipe for ALOO MUTTER. I used to prepare this dish when my son was a kid & he liked it a lot then. & he likes to eat this dish without roti/bread. Later i joined FB & joined some food groups too & i was busy in preparing new new dishes which are posted in that food groups & i totally forgot about this dish. Recently my son reminded me of this dish & again prepared it for him. This is quick to prepare dish  & goes well with rotis/bread/idly/dosas.


   
INGREDIENTS:-

potatoes - 2 big
mutter, fresh/frozen - 1/2 cup
onion, finely chopped - 2
tomato, finely chopped - 2
ginger - 1/2 inch
garlic flakes - 8
garam masala powder - 1 tsp
kitchen king masala powder - 1/2 tsp
turmeric powder - 1/4 tsp
salt to taste
coriander leaves for garnishing



METHOD:-

1. Peel & cut potatoes into half. Pressure cook them along with green peas. Take 2-3 whistles. (don't discard water)
2. In a non stick pan heat little oil & add chopped onions & fry till light brown.
3. Crush ginger & garlic flakes & add it to pan along with chopped tomatoes. & fry them till tomatoes are mushy.
4. Add turmeric powder+garam masala powder+kitchen king masala powder to this & fry for a while.
5. Smash 1/2 cooked potato & add it to the fried mixture & mix well.
6. Now cut remaining cooked potatoes into medium pieces & add it to the gravy along with cooked green peas & water.
7. Add salt to taste & mix well. 
8. Check the salt & consistency of gravy. Add more water if desired to adjust the consistency of gravy.
9. Bring it to boil.



10. Transfer it to a serving bowl & garnish it with chopped coriander leaves.
11. Serve hot with rotis/ bread.

BREADIZZA / BREAD PIZZA !!!!!!


BREADIZZA is nothing but pizza but the base is bread instead of pizza base. Now a days who don't like pizzas ??? From kids to adults, everyone is fan of pizzas. But i heard that pizza base is not good for health :( So, i tried substituting pizza base with bread & named it as BREADIZZA :D. I think this is very healthy substitute for pizza base. Rest method are same as of making pizza. You can grill them or you can make them on non stick tawa too. I used non stick tawa method here. I even tried Idlizza / Idly pizza, Chapatizza / Chapathi pizza & Eggizza / Egg pizzas. Chapatizza is my son' creation when he is 10 yrs old . Recipe for Eggizza is slightly different. Will post it soon.  I even tried CUPIZZAS using bread & already posted them in my blog. Hope you guys liked it.


INGREDIENTS:-

bread - 5 slices
PIZZA SAUCE - as required (please click on the link for the recipe of Pizza sauce)
chopped vegetables - onion, tomato, mushrooms, capsicum, sweet corn etc ( more veggies more taste. I used only  1/2 onion + 1/2 tomato + 4 mushrooms here as i didn't have capsicum & sweet corn in my refrigerator. If you use more veggies pizza will look more colourful & will become more tasty)
salt - to taste
oil - 1 tsp
pepper pow - 1/2 tsp
mozzarella cheese - as desired 



METHOD;-

1. Chop all the veggies & keep aside.
2. In a pan,  heat 1 tsp oil add chopped veggies+salt to taste+pepper powder & fry it for 3-4 mins. & keep them aside.

3. Grate the cheese & keep it aside.

4. Arrange bread slices in a plate.

5. Apply PIZZA SAUCE on them.

6. Sprinkle grated cheese on them.

7. Sprinkle veggies on them.

8. Finally again sprinkle grated cheeses on them.

9. Now your breadizzas are ready to go into oven / tawa.

10. Heat non stick tawa & brush it with butter. Low the flame. Arrange breadizzas on them.

11. Close it with a lid.

12. Cook it on low flame till the cheese melts.

13. Now your breadizzas are ready to serve. Transfer them to a serving plate & serve them hot.











NOTE:- You can bake them in oven too. Grill them until cheese melts completely.

and here's an tip:-

You can substitute base with idly, dosa or chapathi too. I have some pics posted below.

HOME MADE PIZZA SAUCE !!!!!


This is the recipe for home made PIZZA SAUCE. My brother's wife gave me this recipe. Really very very easy to make & you cam store it in refrigerator up to 1 week. You can use this sauce for SWs too. A must try recipe.

INGREDIENTS:-

ripe tomato - 1 big
jeera/jeera powder - 1/4 tsp 
garlic flakes, peeled - 7-8
tomato ketch up - 4 tbsp
red chilly sauce - 1 tbsp (optional) (if u r using red chilly sauce then use tomato ketch up only 3 tbsp)
pepper powder - 1/2 tsp
chilly flakes - to taste ( i used i pkt which we get at Pizza Hut)
oregano - to taste ( i used 1 pkt which we get at Dominoz)

METHOD:-

1. Grind tomato(cut it into 4 pieces)+jeera+garlic flakes into a smooth paste. 

2. Take this paste into a bowl. Add tomato ketch up+red chilly sauce+pepper pow+chilly flakes+oregano to this paste & mix well.
3. You can store it in refrigerator up to for 1 week.

EGG OMELET !!!!



EGG OMELET...i always like to eat egg omelets at road side carts. They make very tasty omelets. But few days back i went to Club Mahindra, Coorg resort to celebrate my bro's 2nd daughter's bday. There at breakfast i ate a very tasty omelet. There are 3 types of omelets there. 1. Masala omelet 2. Cheese omelet 3. Plain omelet. I liked the masala omelet very much with loads of green chillies in it. I didn't asked them for recipe but i observed their way of making omelet & decided to make it at home. I don't know which oil they used but i always prefer coconut oil for omelets. So, i used coconut oil here. It tasted almost similar so, i am sharing this recipe with you all.



INGREDIENTS:-

eggs - 3
green chillies, finely chopped - 2
salt to taste
oil - 2tsp (i used coconut oil)
milk ( boiled & warm) - 1 tsp


METHOD:-

1. In a bowl break the eggs. Add finely chopped green chillies+salt to taste+milk.

2. Beat it with hand beater well.


3. Now heat the non stick pan. Rub oil on it & pour the beaten mixture on it. & turn the flame to medium. Let it cook for sometime.

4. When it becomes almost hard fold the sides as shown in the below picture.

5. Flip it over & let it cook for sometime on low flame.

6. Now switch off the stove & transfer it to a serving plate.

7. Eat it hot.

VEGETABLE STEAMED RICE !!!!!


VEG STEAMED RICE is a Chinese dish. Actually i didn't followed authentic recipe here. I first tasted veg. steam rice at my most favourite restura DOLLOPS, Manipal. My sisters bil ordered it & i am just fida over it after tasting. & tried it there after so many times at Dollops. But every time i felt it is very easy to make at home. & one day finally i decided to prepare it at home. & it tasted almost similar to Hotel Dollops veg steam rice. I tried it by adding pepper pow & without pepper pow & liked without pepper powder very much. I added pepper powder in the pic above i posted. Will post another pic too without pepper powder later.

INGREDIENTS:-

white rice - 1 cup
onion, chopped into cubes - 1 big
capsicum, chopped into cubes - 1
carrot, chopped into rounds - 1
Cauliflower florets - 10
water - 1 1/2 cup (use the vegetable stock too+water...totally it should be 1 1/2 cups)
cornflour - 2 tbsp
salt to taste
pepper pow to taste (optional)

METHOD:-

1. Cook vegetables (don't over cook it) & don't throw the water.
2. Wash & cook rice in pressure cooker, rice cooker or directly on flame. I followed  pressure cooker method. Put 1 cup washed rice+2 cup water & close the lid & take 2-3 whistles.
3. Now in a nonstick kadai, add vegetable stock+water+cornflour(mix cornflour well in little water & then add it) & bring it to boil till it becomes thick.
4. Now add para boiled vegetables+salt+pepper & bring it to boil.
5. Switch off the stove.

How to serve veg steam rice ?????

Take a serving plate. Spread steaming hot rice & then pour the gravy upon it as shown in the pic & serve it hot.

PONSA MULIK/JACKFRUIT FRITTERS !!!!


I adapted this recipe from APS KITCHEN. This is a pure Amchi cuisine & seasonal delicacy. This is made from jack fruit. Btw, we can prepare soooo many yummy dishes using jack fruit during season like ponsa mulik, ponsa muddo, ponsa paththoli, gharayi, jack fruit ice cream, jack fruit sheera. ponsa bajo etc. One of my friend even tried jack fruit jamoon too. I just luvvvvv jack fruit & especially ponsa mulik is my most fav dish from jack fruit. I bet no one can eat just one.

INGREDIENTS:-

jack fruit - 9-10 deseeded bulbs
fresh grated coconut - 1 cup
grated jaggery - 1 cup
sooji/semolina - 1 cup
pinch of salt
coconut oil to deep fry

METHOD:-

1. Grind jack fruit bulbs+grated coconut+jaggery adding little water.
2. Add pinch of salt & mix well.
3. Add sooji little by little & mix. If u add all sooji at once, there might be lumps & also mixture might get very dry & hard.
4. Make a mixture of thick consistency so you can make small balls.
5. Heat coconut oil in a deep frying pan. Use a tablespoon to take small portion of the mixture & deep fry in the hot oil until golden brown.

KHARWAS LADDOOS !!!!


KHARWAS LADDOOS r my own invention :D Tried to make best out of waste & its ok ok in taste. Can try this recipe once :D

INGREDIENTS:-

For kharwas:-

condensed milk - 400gm
milk - 1 cup
curds - 1 cup
elaichi pow - 1/4 tsp
aluminium foil - 1

To make laddoos:-

Kharwas
ghee - 2tsp
badam pow - 5 tsp (i used MTR badam feast pow)
horlicks pow/bournvita pow - 2 tsp

METHOD:-

How to make Kharwas ????

1. In a large bowl, mix condensed milk+milk+curds+elaichi pow well.
2. Beat it with electric beater. Beat it for a few seconds till you see froth on top. Scrape the sides as you beat to make sure the ingredients have mixed well.
3. Sprinkle cardamom powder (optional).
4. Pour into a 1 litre pudding mould or any vessel that goes in the cooker(till 3/4th full).
5. Cover vessel tightly with grease-proof paper (i used a lid).
6. Pour some water into the cooker. Place a grid or a perforated plate(plate with holes) into the cooker (this way the vessel will not tilt). Place the vessel in cooker. Close the cooker(do not put whistle).
7. Turn the heat to medium-high or high & bring the cooker to full pressure, about 5 mins. Reduce to medium low & cook for another 15-20 mins.
8. Let it cool.

How to make KHARWAS LADDOO ???

1. Now mix this kharwas well and discard water from it.
2. In a kadai, add ghee & add kharwas+badam pow+horlicks pow/bournvita pow & mix well until the ghee leaves the sides.
3. Now switch off the stove and let it cool & make laddoos from it.

EGG BURGER !!!!!


Today i prepared EGG BURGER...it was soooo yummyyyyy. Actual recipe i adapted from KHANA KHAZANA. But i made slight changes in recipe & used the ingredients i had at home. Like i used Amul cheese spread instead of mayo & i skipped the ingredients cheese slice & lettuce leaf coz i didn't have them at home. And i applied cheese spread+red chilly sauce mixture on both slices of bun. And i used fried onions & tomato slices on both the sides. But i just forgot to grill the bun :( Anyways, will present here what ever i prepared today :D



INGREDIENTS:-

Fried Egg - 1
Oil - 1tsp
Burger bun - 1
Amul cheese spread - 1 tbsp
Red chilly sauce - 1 tbsp
salt to taste
Tomato slices - 2
Onion, thinly sliced - 1 big
Toothpick - 1



METHOD:-

1. How to make fried egg ???

Heat a non stick tawa. Apply oil on it. Break a egg on this tawa & sprinkle pepper powder+salt to taste. & fry on both sides.

2. Put a tsp of oil in a nonstick pan & fry thinly sliced onions in it until light brown in colour.

3. Mix Amul cheese spread+red chilly sauce very well.

4. Cut the burger buns into halves like in the below picture.

5. How to assemble the burger ?????



     a. Spread 1 tbsp cheese spread+red chilly sauce mixture on one  slice of burger. (as shown in the above pic no.1)
     b. Top it with fried onions & then a slice of tomato & then fried  egg & again with a slice of tomato. (as shown in the pics 2, 3,        4 & 5)
     c. Spread remaining cheese-sauce mixture on another slice of   burger. (as shown in the pic 6)
     d. Top it with remaining fried onions. (as shown in the pic 7)
     e. Close the burger with this slice of bun. (as shown in the pic 8)
     f. Insert a toothpick on the top of burger bun (as shown in the    pic 9)
     g. Now your burger is ready to eat. (as shown in the pic 10).
